Violet salad

It should be noted that almost any salad made from layers can be made and decorated this way. And it will look phenomenal. We, in turn, propose to make a very exquisite layered salad "violets" from such products as: an equal part by volume of smoked chicken, fresh mushrooms, fresh cucumbers and carrots cooked in Korean. You will also need mayonnaise to lubricate the layers of salad and a little more prunes with sourness, literally two hundred grams. For decoration, you will definitely need radishes, hard-boiled egg yolk, spinach leaves (it must be fresh), round crackers.

Mushrooms must be thoroughly washed, cut and darkened, frying in vegetable oil, while slightly salt and pepper them. Other foods should also be prepared, which need to be rinsed (prunes, cucumbers) and cut into long thin strips. We mean prunes, cucumbers, chicken, carrots. Place the salad layers in a large puff salad ring as follows. First, lay out a layer of smoked chicken, then prunes, mushrooms, cucumber, carrots in conclusion. Each layer in the salad should be thinly greased with mayonnaise.

We remove the ring. We cover the sides of the salad with unsweetened (preferably salty) cookies. At the top, we build a bush of violets made from thinly chopped radish (it would be nice to tint it with a blue food coloring or purple cabbage juice), spinach as leaves for flowers. Chop the onion finely and pickle in a solution of vinegar (two to three teaspoons), salt (pinch), sugar (one small spoon), added to half a glass of water. In such a solution, you need to hold the onion for about half an hour.

Meanwhile, steam the chicken fillet (preferably the breast) and cut it into small cubes when it cools. The eggs also need to be boiled. Place the sliced chicken on a large crescent-shaped salad plate. We smear it with mayonnaise. Now onions, again mayonnaise. Now chicken eggs. Grate them or chop them in a food processor. Mayonnaise again.

Rub the cheese on a grater. We also spread most of it on top of our crescent. We smear with mayonnaise. Put some of the remaining cheese on top closer to the edge of the outer side of the watermelon wedge. It is no longer necessary to lubricate it with mayonnaise. We cover the edge of the watermelon slice with a cucumber (you need to grate it a little and add salt in a plate, slightly squeeze the juice out of it). Put a finely chopped tomato on the rest of the "wedge". Chop black olives at random and spread them over the tomatoes, as a hint of watermelon seeds. Of course, the layers of such a flaky salad can be varied. But we suggest decorating a watermelon wedge on top just like that.

To prepare this royal New Year's dish, you will need salmon steaks, seasonings - sea salt or ordinary, also black allspice ground pepper, a bouquet of Italian herbs, and vegetable oil. A special sauce for such a dish is offered from heavy cream (a glass, 20 percent fat), yellow coloring spices, for example, curry powder (a teaspoon without top), a bunch of herbs (better than parsley) and red caviar (a couple of tablespoons).

Ready-made salmon steaks should be bone-free if possible. We put them in a heat-resistant dish, on the bottom of which rast is added. oil. Sprinkle with spices on top. Pour the sauce to be prepared as follows. Mix the cream, yellow seasoning, herbs (finely chop). We interfere. Gently add caviar to the sauce.
