Wonderful gooseberry berries delight us every year with their unique and peculiar taste. And, of course, we often have a desire to prepare these pretty berries for future use. How can this be done? You can freeze gooseberries, either pureed or whole, or dry them using an electric dryer or in the oven. In addition, you can always make excellent preparations for the winter from ripe berries - jam, jams, etc
When and how to pick gooseberries?
Gooseberries intended for storage are collected in pre-prepared baskets and boxes. This should be done in clear and dry weather. If the peel of the berries is thin, then small containers should be chosen - this will help preserve the integrity of the gooseberry. Collected berries are not recommended to be poured from one container to another. At the same time, they tolerate transportation quite well.
How to store?
Gooseberries selected for storage should never be overripe - such berries lose almost all nutrients and cannot be stored. All berries must be clean, without fungal damage and dense enough.
In the refrigerator, gooseberries are stored packed in polyethylene bags or in strong sealed containers. In this form, it is perfectly preserved for at least two weeks, maximum - three weeks.
At temperatures from zero to one degree, gooseberries are easily stored for two months, and at lower temperatures, they are stored for up to six months.
Freeze gooseberries
Frozen gooseberries are good because they retain up to 70% of their valuable properties. Berries of yellow-green color are considered to be the best for freezing.
Immediately before freezing, the berries are carefully sorted out, cutting off the remnants of inflorescences and stalks from them, and then gently washed under a stream of water. Then they are scattered on a plywood board (it can be easily replaced with cardboard), the area of which allows it to be placed in the freezer, and sent to freeze. By the way, before that, it is important not to forget to thoroughly dry the gooseberries on clean paper.
As soon as the berries are frozen, they are poured into polyethylene bags, sealed and put back into the freezer.
In the absence of plywood boards or cardboard, you can freeze gooseberries in small containers or in plastic molds - the smaller the container, the better the berries will freeze.
Dry gooseberries
Exceptionally healthy ripe berries are selected for drying, after which they are thoroughly washed and cleaned of the remnants of stalks and sepals. Then the gooseberries must be blanched by placing them in a colander and holding them for a couple of minutes over boiling water. Such a maneuver will help prevent extremely undesirable darkening of the berries and significantly speed up the drying process. Next, the berries are laid out in a thin layer on a baking sheet or on a sieve and sent to the oven. First, the temperature is set in the oven in the range from thirty to thirty-five degrees, and then it is increased to sixty to seventy degrees. If you immediately start drying gooseberries at a high temperature, the berries can easily dry out and become crusty.
You can dry the berries in a special drying cabinet - of course, if one is available. However, even when using it, you also need to constantly monitor the temperature regime. Both the drying cabinet and the oven must be ventilated from time to time - water vapor constantly formed during the drying process should freely escape outside. And so that the gooseberries do not get worn out, their doors are closed gradually. And, of course, all drying berries need to be mixed regularly. On average, the process of high-quality gooseberry drying takes five to seven hours.
Dried berries are poured into paper, fabric or gauze bags and sent for storage - in this form they are perfectly stored for about two years.
By the way, dried gooseberries are quite capable of replacing raisins. And before you eat them, they are often poured with liquor or boiling water. In addition, dried gooseberries make wonderful compotes and are ideal for baking.
