And to make the dish more fragrant, do not be too lazy to crush black pepper with peas yourself just before seasoning the meat with it. It is advisable to marinate the pork two hours before sending it to the coals.

The classic and quick recipe for kebab marinade is to use spices with vinegar and onions. The disadvantage of this method is that the meat is dryish. To make it more juicy, use soy sauce. But if they take very little vinegar, then pour the meat with soy sauce abundantly. For a 4-5 liter pot of meat, you will need 2-3 bottles of soy sauce (depending on the volume of the container). In this case, it is also advisable to let the meat stand in the marinade for a couple of hours.
Express recipe for a quick barbecue
If you can't wait to send the meat to the fire, then rub the pieces with salt and ground black pepper, soak them in mineral water. To make the taste more spicy, you can also add fresh chopped herbs - rosemary, coriander, basil. In this case, it can be put on a skewer after half an hour.
How to make onion marinade sauce
If pork kebab is a dish rather for a festive meal, then you can diversify everyday life in the country by cooking chicken meat on a fire. An inexpensive pleasure and at the same time a nutritious treat - chicken wings baked on charcoal. Before sending them to the coals, it is worth pickling the wings in grated onions, salt and add red ground pepper to the meat. Marinated for 30-40 minutes. The dish is cooked on charcoal very quickly.
Meanwhile, a delicious sauce is made from the remaining onion marinade. To do this, it is sent to a frying pan with heated sunflower oil. Fry a little and add about the same amount of tomato sauce. Stir well and heat up, then add a couple of tablespoons of cream. Now you can remove the sauce from the stove and transfer it to a bowl. While the mass cools down, finely chop the cilantro greens. It is added to the sauce last in a ratio of about 1: 1. The taste and aroma of this sauce are absolutely amazing. It is suitable for wings, and for pork kebabs, and for any other dish. You can add other greens, but it is the cilantro that is the highlight and gives it a unique oriental taste.
And, of course, after a hearty festive barbecue, you should collect the ash remaining from the fire. This valuable fertilizer is still useful as a top dressing. So even a pleasure trip to the dacha with a nutritious meal will not go without benefit for the garden.
