We have a particularly keen desire to taste fresh strawberries in winter. There is such an opportunity. Today, frozen berries are available in stores; they are sold by weight and in packages. But many doubt the quality of such a product, so it is better to prepare strawberries yourself. Moreover, the store version is often not stored correctly, when defrosting it turns into a shapeless slurry, and turns sour in pies.

A good housewife knows how to preserve strawberries. There are different ways to do this, using the freezer. If you follow simple rules and technology, the strawberries will retain their shape and aroma as freshly plucked berries. All this is done easily and without any special problems. As a result, household members will be treated to fresh strawberries in the winter. So, get acquainted with the "tricks" for freezing strawberries and save the article to bookmarks.

How to properly prepare strawberries for storage

Only the berry that you cook according to the rules will be fragrant, there are only four of them.

1. The success of the enterprise depends on the condition of the selected berry. It shouldn't be overripe. For freezing, choose firm, dark red berries harvested in dry weather. They will not work with crumpled barrels, so the sorting must be thorough, but after freezing you will get a quality product. By the way, size matters too. Small strawberries will freeze faster and retain their rich flavor, so give them preference.

2. When selecting fruits for harvesting, remember that it is better to get a smaller amount than a lot, with rotten, fermented berries.

3. It is advisable not to wash the strawberries before freezing. If this process cannot be avoided, then use the water quickly, that is, do not overexpose it in a wet state, excluding the possibility of deoxidation. Leave the stalks on the berries before washing, this will create "tightness" - less juice will leak out and the aroma and vitamins will be preserved. For washing, it is better to pour the selected, small portion into a bowl, add water and remove, removing the stalks. After washing, lay on a cloth / paper towel in one layer to dry out faster.

4. A scanty amount of berries can be frozen without containers by placing them on a cutting board. If you plan to process more than half a kilogram, then you need a container. Better to take plastic jars / containers. Any store-bought container will do, including cut bottles and ice cream buckets.

Three ways to freeze strawberries

1. Traditional version. Put the prepared, dried strawberries in a container in one or two layers. Put it in the freezer for a day, if there is a quick freeze function, turn it on. The next day, your product is ready for long-term storage. Pour into a plastic bag, tie it tightly, let it lie and wait in the wings.

2. "Sweet strawberry" is the name of the second method. Do not tell me, but during storage, the berry partially loses its taste and shape. A well-known preservative, sugar, will help to compensate for this deficiency when freezing. For each kilogram, it is enough to use 300 g of sand (less is possible). So, putting the berries in the dishes, sprinkle the layers with sugar (the stalks must be removed without fail). Now put the container in the refrigerator (not in the freezer) for 2-3 hours. During this time, the strawberries will juice and cool. Prepare trays for long-term storage, they should be clean and dry. Pour the chilled product into them and pour the resulting juice / syrup. Further, the process is similar to the first option.

3. An unusual way of storage - in the form of puree. This option is suitable for overripe, but not rotten berries. It is also good because it takes up little space in the refrigerator and is ready for any kind of culinary delights. The berry is prepared as usual, but after drying, a blender is used for quick pureeing. We spread the resulting mass in plastic trays and send it to the freezer. Add sugar if desired. After a day, we take it out, put it in bags or wrap it in polyethylene and store it in the freezer.
