The most popular holiday is outdoor recreation. And what a picnic without a barbecue? True, sometimes you really want something new, not ordinary. This is where barbecue (in other words, American-style kebab) comes to your aid. It is especially good to get together with the whole family and organize a barbecue in the country.

The very word "barbecue" appeared in our everyday life not so long ago, but it has already become quite popular. The kebab we know is cooked on skewers, but barbecue products are pre-fried on a special grid. Shish kebab is fried mainly on coals, but barbecue can be cooked both on coals and on a gas or electric stove.

There are two ways to cook barbecue: roasting on a wire rack over coals (similar to grilling) or cooking on coals under a lid (this creates a smoking effect). When preparing barbecue in the first way, you do not need a special device. A brazier or any other sturdy dish in which you can put coals is enough, and on top of a grate for frying. But with the second cooking method, you will need special devices. Today their choice is very large. There are simple ones designed for small companies and for a small number of products, and there are devices that are even equipped with pressure and temperature sensors, etc.

Barbecue foods include poultry, fish or meat steaks, seafood, sausages, etc. For barbecues made from the same foods to taste differently, you need to use sauces and marinades.

* BBQ tastes much better if you use charcoal to cook it. Their advantages are that they are easy to ignite, they give an even heat, they can be used both in barbecues and devices specially designed for barbecue. The type of tree also matters. For barbecue, it is better to take coals from trees such as apple, cherry, oak, hazel. They will give the dish a unique flavor. But the coals of coniferous trees are not suitable, because they can completely ruin the dish: when burning, resins are released, which give the meat a sugary taste and a heavy smell;

* if meat of young animals is chosen for the barbecue, then it does not need to be marinated beforehand. It is enough to grease it with sauce 5 minutes before being ready. The most commonly used tomato sauce. To prepare it, you will need 1 tbsp. olive oil, heated in a pan, 1 small onion and 2 cloves of garlic, sautéed in this oil. After the onion turns golden brown, add a glass of tomato paste, half a glass of water, 1 tbsp. vinegar, 1 tbsp. sugar, 0.5 tbsp. mustard, black pepper to taste. A sauce made with these ingredients is considered a classic barbecue sauce;

* good barbecue fish. For example, salmon or tuna. To do this, fish previously cut into portions must be marinated for several hours. It is best to prepare the following marinade: 4 pcs. chop onions and pour 500 ml of dry red wine, add 2 tbsp. sugar, 0.5 tsp. black pepper, 1 tsp. oregano greens (can be used fresh, or dry). For marinating, the fish should be left in the marinade for about 2-3 hours. And then simply fry on a wire rack for 10 minutes. In the process of frying, the fish must be turned over often and watered with the remaining marinade.
