So, collecting dandelions for jam is best in April-May, when the plant blooms. It is best to pick in a clear and dry weather: then you can see the beautiful, well-blooming, juicy flower buds. It is undesirable to collect dandelions near factories, gas stations, along roads. In this case, there will be no guarantee that the raw materials are environmentally friendly. It is best to fold the buds in wicker baskets, so the flowers will not mate. Dandelions must be rinsed thoroughly before use.
It is imperative to cook dandelion jam in an enamel bowl. It is strictly forbidden to use iron and aluminum cookware. You need to store the jam in a glass container under iron lids. If the jam is not rolled up, then it must be in the refrigerator.
To give the jam a unique taste, you can add a little mint, cherry pits, slices of lemon, orange or tangerine, raspberry pomegranate juice, etc. You can experiment with additives yourself. The readiness of the jam can be easily checked. It is enough to drop a small amount of the product into a saucer and then tilt the plate slightly. If the jam is ready, then the drop will not spread.
Jam recipes
There are two ways to make dandelion jam - hot and cold.
Dandelion Jam with Lemon
Prepare it hot. For cooking you will need:
* dandelion flowers (only yellow heads) - 350-400 g
* sugar - 1 kg
* lemon - 1 pc. (medium size).
* water - 1 l
Immediately it is worth making a reservation that the jam will be in a couple of days.
The flowers need to be filled with water and lemon cut into pieces should be added to them (you do not need to cut the zest). Put on fire and cook for an hour and a half. Then cover the resulting mixture with gauze and leave to infuse for a day. This time is just enough for both flowers and lemon to give up all their useful substances. After a day, strain the broth through cheesecloth, squeeze the cake and discard. Add the required amount of sugar to the resulting liquid and cook the jam (the mixture should thicken). Pour the treat into sterilized jars and roll up.
Dandelion jam (cold method)
Cold preserves contain the greatest amount of vitamins and nutrients.
You need to spread the raw materials in a sterilized jar. This will need to be done in the following proportions: flowers - 1 part, sugar - 2 parts. So, we lay the raw materials in layers: flowers - sugar, flowers - sugar. The last layer should be sugar. After the last layer is poured, the flowers will need to be carefully crushed with a wooden crush. The taste of the future jam will depend on how this will be done. Having finished crushing the flowers, you need to bandage the neck of the jar with gauze folded in several layers. Put in a cold place for several months. After that, strain the broth, store in the refrigerator.
