* you must take into account the fact that not all roses are suitable for use in cooking. You can cook jam only from a red or pink tea rose;
* make jam only from petals, and the right time to collect them is morning;
* the white part of the petal must be cut off, otherwise the taste of the jam will be too tart;
* rose petals are perfect with lemon or citric acid. Lemon will add a slightly perceptible sourness to rose jam.
Rose jam
I bring to your attention a fairly simple and easy recipe for rose jam. For him we need:
* rose petals - 200 g
* sugar - 150 g
Preparation
Rose petals must be thoroughly rinsed under running cold water. The best way to do this is by placing the petals in a colander. Next, leave them there for a while to allow excess liquid to glass. After that, we put the petals in an enamel bowl, fill them with sugar and grind them thoroughly until juice is formed. Then we spread the mass into prepared small jars, close tightly with lids and put in the refrigerator for storage.
Rose jam with lemon
Ingredients:
* rose petals - 500 g
* sugar - 1.5 kg
* lemon - 0.5 pcs.
* water - 1 glass
Preparation
Wash rose petals, chop finely and mix with part of sugar (500 g). Leave the petals and sugar in a saucepan for a couple of days. After two days, boil the syrup from the remaining sugar mixed with the juice of half one lemon. Add rose petals to hot syrup and boil the jam until tender. It is best to do this over low heat: the petals will boil well, and the jam will not burn.
Rose petal jam
We will need:
* rose petals - 300 pcs.
* sugar - 700 g
* water - 1 glass
* citric acid to taste
Preparation
Rinse the petals, prepare for cooking (cut off the white parts from each petal). Fold into an enamel container and cover with sugar (take only half of the required amount). Dissolve citric acid in a small amount of boiled water and add to the rose petals. Mix everything and put the resulting mass in a cold place for about 6 hours, so that the rose petals let out the juice and absorb citric acid.
Cook the syrup separately: pour the remaining sugar with water and put on low heat. To prevent the sugar from burning, the syrup must be constantly stirred. Bring it to a boil and pour over the rose petals. Then put the saucepan on low heat again and boil the jam.
Pour the prepared hot jam into prepared jars, close the lids, turn upside down, wrap and leave to cool completely. When it comes to storage, it is best stored in a cool place: in the refrigerator or cellar.
As you can see, the rose has a beneficial effect on the human body: it has an antiseptic, anti-inflammatory, wound healing, restorative effect. I think there are enough arguments for each housewife to find a place in her summer cottage for a bush of tea roses.
