Annual plant
All these beautiful names are given by an annual plant from the legume family, unpretentious to the soil, but loving warm and dry weather.
The branchy stem of Helba rises above the ground a little more than half a meter. The taproot penetrates deeper into the soil to provide food for the aboveground part of the plant.
The stem is covered with tripartite small leaves with a jagged edge, egg-shaped. In the axils of the leaves, yellowish-white miniature flowers nestled, resembling moths at rest.
The pollinated flowers turn into rather long beans (up to 10 cm), inside which the seeds are located. Unlike our usual oval seed-beans, Helba's seeds are angular and small, and therefore at first glance they can be mistaken for some kind of grain, for example, inferior buckwheat.
It's amazing how such a simple plant manages to fill its seeds with a huge amount of nutrients.

Fenugreek or Helba fruits contain proteins and carbohydrates; vitamins important for humans, such as vitamin "C", "A", "B6"; antioxidants and acids (folic, nicotinic); alimentary fiber; as well as a number of trace elements (potassium, calcium, iron, copper, magnesium, phosphorus, selenium, zinc).
This rich content makes Fenugreek an attractive culinary destination. In India, for example, young fragrant shoots of the plant are served as a seasoning for meat dishes, and the seeds are used in the preparation of many national dishes. Sprouted seeds are added to salads.
