It is difficult to find such a person who would not like corn at all. And in order to enjoy the bright and very tasty grains you could last longer (and ideally in winter), it is important to learn how to properly store corn. It can be stored not only in the refrigerator or in the freezer - you can always stock up on great canned corn. And boiled corn will survive no worse if you take into account some of the features of its storage
Storing seeds in the refrigerator
In order to keep fresh corn in the refrigerator for as long as possible, the ears must be completely peeled and free of brown fibers. Then water is poured into a wide saucepan or bowl and salt is added (for every liter of water, a teaspoon), lemon juice and ice cubes. Peeled corn cobs are placed in the resulting solution, kept in it for about fifteen to twenty minutes, after which the grains are separated, the stumps are thrown away, and the solution is drained through a colander. The kernels processed in this way are transferred to airtight zip bags - in this form they will be edible for three weeks.
Storing the ears in the refrigerator
If you don't really want to mess around with the separation of the grains, you can save the whole corn. The cobs are peeled from the husk and freed from the fibers, after which they are sealed in bags equipped with fasteners and sent to the refrigerator. True, this method will not be able to preserve corn cobs for a long time - literally in three days the corn will begin to lose its former sweetness. The only exception will be sweet varieties that are capable of maintaining their excellent taste for ten days. However, ten days is also a very short time, because often you want to stock up on the long-awaited ears for the winter.
Freeze corn
Corn is good because it can be frozen both in grains and whole cobs. Before you start freezing the ears, they are cleaned of husks and brown fibers, and then the tips (unripe parts of the ears) are cut off from them and with the help of a sharp knife they get rid of all the spoiled kernels. Next, they put a basin of ice water and a saucepan with boiled water next to each other and begin to lower the cobs one by one into one container, then into another, each time holding them both in the basin and in the saucepan for two or three minutes. Then all the cobs are transferred to dry clean towels and dried thoroughly. And as soon as they dry, each ear is individually wrapped with cling film and transferred to the freezer.
To freeze corn kernels, they do the same thing as when freezing the ears. The only difference is that after the processed cobs are completely dry, all the grains are cut from them with a knife and, packed in zip bags, are sent to the freezer. In the event that there is too much corn harvested, it does not hurt to write dates on the bags, since in this form the corn can only last up to one and a half years.
Canning corn
To preserve the bright corn kernels, the peeled ears are boiled for ten minutes, after which they are cooled and all the kernels are cut off from them. The seeds, in turn, are placed in well-sterilized jars, filling them by about 9/10. The grains poured into jars are poured with cold and salty boiled water (for each liter of water, a teaspoon of salt is consumed), and then the jars are transferred to a cool place for two to three weeks, having previously loosely closed them with lids. After this time, boiled water is added to the jars - it should cover the whole grains. Then they are tightly closed with lids and transferred to the refrigerator. In this form, corn is perfectly preserved for about two to three months.
Boiled corn
To safely preserve boiled corn, it is placed in the refrigerator right in the saucepan with the broth in which it was boiled. The fact is that corn is very partial to moisture, so this method will help keep it in its best possible condition.
