Cloudberry is a wonderful "sunny" berry that delights its admirers with a unique and very peculiar taste. In the old days, in order to preserve these tiny amber berries for a longer time, they were simply poured into barrels and buried containers with berries in the ground. And in the spring, juicy cloudberries overwintered under the snow revealed their true taste to a caring person. Of course, today few can use this method, but this is not a reason for worry - there are many other, no less good ways to store this bright and juicy berry
How to collect?
For the cloudberry harvest, summer residents go in July or even in August - by the end of summer, the mouth-watering cloudberry will just fill up with juice and will easily separate from the strong sepals. The collected berries are best put in small buckets or cans. It is noteworthy that it takes a lot of time to fill them, since cloudberries tend to gradually lose their former volume and settle.
Freeze cloudberries
The washed and dried cloudberries in one layer are laid out on a shallow pan and placed in the freezer until they freeze completely. When the berries are frozen, they are packaged in small plastic bags or plastic containers and placed in the freezer for storage.
Dry the berry
Dried cloudberries are also very healthy and tasty. It should be dried only in well-ventilated rooms (on city glazed balconies, as well as on the street under awnings, in attics, etc.). However, it is important to try to prevent direct sunlight from falling on the drying cloudberries. Also, the berries must be mixed periodically so that they dry evenly.
You can also dry amber berries in the oven. At the same time, its door must be kept open, and the temperature in it should not exceed fifty degrees.
Cloudberry jam
Cloudberry jam is an amazing delicacy that can easily be stored all winter. And it is very easy to cook it. The cloudberries, washed with cold water and peeled from the stalks, in the amount of 1 kg are placed in still hot syrup prepared from a kilogram of sugar and 300 ml of water, then the berries are allowed to stand for about five to six hours, and only then they are boiled until fully cooked. You should not stir the cooking jam - in order to keep the berries intact, they gently shake it.
Cooking compote
The prepared cloudberries are laid out in pre-sterilized jars, after which sugar is poured into each jar (as a rule, 100 g of sugar is enough for a half-liter jar). Next, the berries covered with sugar are left to stand for three to four hours (ideally, in a dark and fairly cool place). Then the jars are poured to the top with boiling water, covered with lids and sterilized for fifteen to twenty minutes.
Cloudberry juice
Another wonderful way to store this wonderful berry! First, the cloudberries are blanched in boiling water for a couple of minutes. Then, through cheesecloth folded in several layers, squeeze out all the juice, after which it is filtered again. The resulting juice must be heated to eighty-five degrees (in an enamel bowl), and then poured into sterilized jars, cover them with lids and pasteurize the juice for ten to fifteen minutes at a temperature of eighty-five to ninety degrees. And only after that, the blanks are finally sealed.
Soaked cloudberry
The unripe berries are poured into thoroughly washed tubs, after which they are poured with boiled water (necessarily chilled) and, adding a little sugar syrup, are sent to storage in the cellar.
Among other things, cloudberries can be used to make marshmallows, jam, mashed potatoes, jellies and marmalade. This berry also makes great wines, liqueurs and liqueurs!
