How to store plums
Ripe plums should be stored in cool rooms. Best of all, they are stored in trays - it is this container that helps to create the most favorable microclimate.
Also, plums removed from the branches can be placed in drawers lined with paper. Moreover, in each box there should be no more than three to four layers of plums, otherwise during storage and subsequent transportation, the lower row of fruits may be deformed. All berries to be stored must be dry.
Such varieties as "Hungarian ordinary", "Memory of Timiryazev" and "Hungarian Azhanskaya" are perfectly preserved in dry cellars. As a rule, they are stored in this form for about two to four weeks. All other varieties are allowed to be stored in refrigerators, however, they will be stored less - from ten to fifteen days.
Some summer residents put plums in packages of translucent film, placing no more than one and a half kilograms in each package. And such packages are stored at a temperature of about zero degrees for two to four weeks.
Ripe and juicy plums selected for storage can be frozen. For this purpose, the ripe berries are washed, thoroughly dried on towels, then packed in one kilogram in each bag and placed in the freezer. This method is good in that it allows you to store frozen plums for as long as you like, but during the freezing process, ripe fruits can acquire a sour taste.
You can also make wonderful juice from plums. It is best to use a juicer for its preparation - the juice extracted with its help can be immediately poured into jars without adding sugar, and immediately sealed tightly. And the remaining pulp of the plum is crushed with a blender, and then, carefully warmed up with a small amount of sugar, it is packaged in jars and, after sterilizing, is closed with tin lids. Such a blank can be used as a filling for cheesecakes and pies, as well as for spreading cakes baked for cakes.
Ripe plums are allowed to dry, but before that, it is strongly recommended to hold them on towels on large sunny windowsills for several days so that the fruits wilt slightly. Then they are blanched in a 1% solution of baking soda for one minute, after which they are immediately rinsed with cold water and dried on towels. When the fruits are dry, they are placed on a baking sheet and dried in the oven for three to four hours at a temperature of 40 - 45 degrees. After this time, the plums are cooled, and then dried at a higher temperature.
Storage conditions
If excessively high humidity is observed in the room where the collected plums are stored, then the berries often begin to rot. Accordingly, they must be systematically inspected, removing damaged specimens. Too dry air also negatively affects the collected plums - under its influence, the fruits begin to wilt. The most suitable humidity for storing plums will be between 80 and 90%.
When storing plums in home refrigerators for the first two to three weeks in them, it is advisable to set the temperature to about zero degrees, and then gradually increase it to five to six degrees. Leaving the temperature at the same level is not recommended for the reason that prolonged storage of fruits at a temperature of about zero degrees almost always leads to darkening of their pulp.
How to deal with unripe plums
Unripe plums can be left on the plates until fully ripe at room temperature. When the plums begin to ripen, they will take on a slightly dusty hue.
