There are a number of conditions that need to be met to keep cucumbers strong and fresh. The storage temperature plays an important role in their safety. About which cucumbers will be the most suitable for storage and how to store them in the refrigerator was mentioned in the first part of the article, and in the second part we will take a closer look at the main features of storing cucumbers, as well as rather unusual options for storing them
How to store cucumbers
Owners of cold and dry basements can easily store cucumbers for a month or more. For this, the cucumbers are folded into enameled or ceramic deep containers and sprinkled with sand. It is also allowed to wrap each cucumber in a paper napkin and store them as such in bags.
From time to time, stored fruits should be inspected to contain the spread of rot if it occurs. If yellowed specimens covered with mucus are seen among the cucumbers, they must be removed as soon as possible.
As for storing cucumbers in the refrigerator, they can be stored there not only in open bags in the vegetable compartment - you can also arrange cucumbers in glass jars, which are closed with plastic lids and placed on the lower shelf of the refrigerator. Cucumbers are easily stored in this form for five to seven days.
Storage temperature
The shelf life of freshly picked cucumbers depends on the temperature at which they will be stored: at a temperature of ten to fifteen degrees, they remain for about four days, from five to eight degrees - seven days, and from zero to four degrees - for four weeks. If you store the cucumbers frozen (at temperatures from minus fourteen to minus eighteen degrees), then the green crunchy fruits will last for nine months.
Storage features
Cucumbers are extremely sensitive to increased dryness and humidity, as well as to sudden temperature changes. When in dry air, they quickly lose their taste and shrivel, and in humid and warm conditions they begin to rot fairly soon. By the way, it is for this reason that many vegetables sold in stores are waxed.
It is not recommended to wash cucumbers before storage - homemade cucumbers from the garden also have some protection, so you should not immediately get rid of it. It is quite possible to wash vegetables just before salting or before eating.
And to keep the cucumbers longer, they should be placed as far away from various fruits as possible. This is especially true for bananas and pears with apples - ripe fruits produce ethylene, which contributes to their early ripening.
Unusual storage options
Thoroughly washed fresh cucumbers should be dried with a towel so that all droplets of moisture disappear. Then the peel of the fruit is covered with whipped egg white. When solidified, it forms a film that will allow air to pass through, but at the same time will not allow moisture to evaporate from the fruit. Cucumbers, sent in this form in the refrigerator, are stored much longer.
From the hybrid varieties intended for the preparation of salads, if the fruit has tails, original "bouquets" can be made. To do this, fill a small jar with water, then put cucumbers in it with their tails down and send the resulting "bunch" to the refrigerator. A daily change of water will help to extend their shelf life.
There is another rather original way to preserve cucumbers. Vinegar is poured into a deep enameled saucepan about a centimeter in height and a grate is installed. Cucumbers are placed on this grate, and they do it so that the fruits do not come into contact with the vinegar. Then cover the saucepan with a lid. Evaporation, the vinegar poured into the saucepan will create a gas envelope around the cucumbers that prevents rotting.
A real find will be a clean river located next to the house. If it is available, the cucumbers are placed in a net and, tying a small weight to it, the net is immersed in the river - cool running water will contribute to a longer storage of tasty and crispy cucumbers.
