To make chokeberry jam, 1 kg of berries are taken for 1, 3 kg of sugar and 250 ml of water. Before laying the berries in a saucepan or basin with boiled syrup, they are thoroughly washed and freed from debris, stalks and rotten specimens. For a few minutes, the prepared berries on a sieve are dipped into boiling water, after which they are poured into boiled sugar syrup. The berries are boiled for about 10-15 minutes, after which they are removed from the heat and cooled for 2-4 hours. Then the semi-finished product is again put on the fire, brought to a boil and cooked for 10-15 minutes. Hot jam is poured into small jars (up to 500 ml) and sealed or rolled up with lids. For those who do not tolerate monotony, they can add walnuts, apples or pears and lemon to the jam. In this case, for 1 kg of berries, 1.5 kg of sugar, 200-250 g of nuts, 300 g of sweet apples (or pears) and 1 lemon are taken.
Chokeberry compote
To prepare a compote from chokeberry for 1 liter of water, 400-500 g of sugar will be required, the number of berries is at your discretion. If a 3-liter jar is used, fill it with 1/3 of the berries. Before laying the berries in sterilized jars, they are washed and dried, then poured with boiling water for three minutes and drained. After that, the jars with berries are filled to the edge of the neck with hot sugar syrup, covered with lids and rolled up. Chokeberry compote will be ready for use in 30-35 days. In order to extend the shelf life, citric acid is added to the jar along with the sugar syrup. To improve the taste characteristics of compote, in addition to blackberry, it is not forbidden to use plums, apples and pears.
Jam from fresh chokeberry berries
Making black chokeberry jam will not take much time, moreover, in terms of the content of nutrients, such a preparation prevails over any others. The washed berries are ground or twisted through a meat grinder with sugar in equal proportions. Before proceeding with twisting, it is advisable to scald the berries with boiling water, so the dense skin will soften. It is important to consume the blank within 2-3 weeks, otherwise it will become moldy. By the way, you can use frozen berries for jam, which are defrosted before twisting. To preserve the jam for a longer period, the resulting mass is boiled for several minutes. For a change, you can add apples to the blackberry (for 1 kg of berries - 300-400 g of apples) or quince (for 1 kg of berries - 350-400 g of quince).
