Beets are an amazing vegetable. In a village with a large farm, beet tops do not go to waste - this is a good help as feed raw materials for farm animals and in the poultry yard. And in the skillful hands of culinary experts, tender young beet leaves turn into real delicacies for the most exquisite holiday dishes

What you need to successfully distill beet leaves

For forcing greens, small-sized root crops are used, weighing about 50 g. Those who grow beets in their personal plot, when storing them, need to immediately select suitable specimens and not cut off the tops from them completely. To maintain the growth point, you need to leave petioles about 3 cm long on them. It is also advisable not to touch the root. Thanks to this trick, the leaves grow faster, and their number is much greater than when using root crops from a store with tops cut to the base.

For forcing greens of beets, it is better to use a wide container. Such large plants will be difficult to grow even in the most voluminous pots - they will only take up a lot of space. The best solution would be wooden boxes. Wicker construction bags are also suitable. A drainage layer is arranged at the bottom of the future bed, and a little sand, peat or humus is added to the soil mixture.

Root crops do not need extra space. They are planted tightly to each other, without gaps between them - by the bridge method. The tops are not hidden under a layer of earth. And the roots are shortened before planting.

Conditions and care for forcing beets

For the first week, homemade containers with planting material are left in a dark, relatively cool room, at temperatures ranging from + 8 … + 10 ° С. If several boxes have been filled, the first time they can be stacked on top of each other.

You need to carefully monitor the process so as not to miss the moment when the greens begin to grow. This is a signal to move the "beds" to warmer conditions and provide good lighting. Now the thermometer should be at + 18 … + 20 ° С.

In order for the leaves to grow elastic, with a rich taste, it is important to provide them with an optimal microclimate. In the room where beets are grown, the air should not be too dry. Watering the beds is carried out several times, as the substrate dries up. In addition, the heating degree must not be increased in this room. It is undesirable to place your beds close to radiators and other heat sources.

Harvesting the harvest

Under favorable conditions, the first crop can be harvested as early as three weeks after planting the roots. First, the outer leaves of the plant are used. These tops are used both raw and in cooked dishes.

Before preparing the salad, it is recommended to pour boiling water over the leaves. They go well in recipes with cabbage, spinach, radish, parsley, dill. Experienced chefs advise adding some walnuts.

Beet leaves make a good tandem in recipes with meat. They are added to minced chicken for pies, cutlets and meatballs. Can be used instead of cabbage leaves for cabbage rolls. And, of course, the leaves go to borsch, a vegetable stew.

An original dish can be prepared not only from leaves, but also beet stalks. After stewing them in a skillet with onions and garlic, they are sent to a baking sheet, seasoned with béchamel sauce and grated cheese, and then placed in a preheated oven.
