For several decades, raspberry jam has been an indispensable attribute of Russian tea drinking. Although today Russians are increasingly deviating from this tradition, replacing a tasty and healthy delicacy with high-calorie confectionery desserts that do not have healing properties and most often lead to excess weight. Despite the fact that raspberry jam contains a large amount of sugar, its calorie content is only 273 kcal and, if consumed in moderation, it is not capable of causing harm. Raspberry jam has always been appreciated by the Russian people, because it is an excellent anti-cold remedy, since it affects the human body like aspirin.
Modern gardeners are less likely to grow raspberries on their plots. Most likely, this is due to the fact that the plants grow too quickly and occupy large areas necessary for the cultivation of other equally important crops. But some owners of summer cottages and household plots are not at all embarrassed by this fact, and every winter they enjoy delicious and aromatic raspberry jam at a friendly family dinner. The best part is that the process of making jam is not complicated and does not take much time, difficulties can only be caused by picking berries and preparing them, but even these tasks are solvable and feasible.
Is there any benefit?
No one doubts the benefits of freshly picked raspberries, but does jam have the same characteristics? Undoubtedly! Albeit in smaller quantities. The main advantage of raspberry jam over others is the presence in the composition of natural salicylic acid, which is the basis of some antipyretic drugs. True, with moderate use of jam, you can avoid ailments such as gastritis and ulcers, which cannot be said about aspirin. In addition to the antipyretic effect, the medicinal dessert has analgesic and diaphoretic effects.
Raspberry jam is a source of folic acid, macro- and microelements and vitamins (A, B2, C, E and PP). Thus, vitamins strengthen the immune system, stimulate general tone, provide a healthy complexion and elasticity of the skin, which means they prolong youth. Jam is useful for pregnant women, as well as people who are under stress or depression. This healing product is not deprived of phytoncides, it is these substances that give it a unique smell. As you know, phytoncides are recognized as natural antibiotics with antimicrobial action. Also, raspberry jam boasts a considerable content of pectin, anthocyanins, its own sugars, fiber, flavonoids and tannins.

In a small amount, raspberry jam retains ellagic acid. This component is able to neutralize the action of carcinogens, prevent the formation of cancerous tumors and resist inflammation and various viruses. Few berries contain this substance, raspberries are second only to wild strawberries in its quantity. In conjunction with blueberries, the beneficial effects of raspberries on the body are doubled. Such a tandem will become a real assistant in the treatment of many ailments, including sciatica, anemia and atherosclerosis.
How to prepare berries for cooking?
Ripe berries are suitable for making jam. Overripe and green raspberries are not suitable for a fragrant dessert. The berries are not subject to storage; immediately after harvesting, they are sorted out, removing rotten and wormy specimens, cleared of garden debris and poured into a basin filled with salted water. What is it for, you ask? It's simple: this simple procedure will get rid of worms and insects, which, after some time, will float to the surface of the water. This will not affect the taste of raspberries, the main thing is not to overexpose. Then the raspberries are washed, but not under running water, otherwise the berries will lose their shape or, even worse, turn into porridge.

How to cook?
To preserve most of the nutrients, it is better to use the recipe for five-minute jam. 1 kg of sugar is taken per kilogram of raspberries. If we are talking about forest raspberries, then the amount of sugar is increased by 200 g. Peeled and washed berries are put in a bowl and covered with sugar for several hours (2-4 hours). Then the basin is put on fire, brought to a boil and cooked for five minutes, skimming off the foam. While still hot, the jam is poured into sterilized jars and rolled up with metal lids. It is advisable to use cans of small volume - optimally 500 g. According to the classic recipe, after boiling, the jam is boiled for 15-20 minutes. To add flavor to the jam, add a pinch of vanilla or a few teaspoons of brandy. A raspberry dessert with such complementary ones will act both as an independent sweet dish, and as a filling or an interlayer for pies, pastries and cakes.
