Vareniki is an old Slavic dish consisting of unleavened dough and filling. Cottage cheese, meat, potatoes, hard cheese, berries, mushrooms, cabbage are used as a filler. If you wish, you can come up with any filling. Let's move on to the recipes.
Dough preparation
In dumplings, the ratio of dough and filler is 1: 1. If you have 1 kg of cottage cheese, then the same amount of flour is taken. Knead the tough dough, like on dumplings. 1 kg of flour is poured into the container, 2 raw eggs, 0.5 tablespoon of salt are added. Gradually pour in about 0.5 liters of boiled cold water. Everything is thoroughly mixed.
If the dough sticks to your hands, then flour is added.
Lay out the base on the board. Crumple until smooth.
Cut off a small piece of dough. Roll it into a layer of medium thickness. (Too thin a layer breaks during cooking, the contents go into the broth.) Cut out into a circle, apply the filling. Gently pinch the edges, making a beautiful edging along the seam.
Run the finished products into boiling salted water. As soon as they surface, they detect 5-10 minutes. Spread out with a slotted spoon on a plate.
Dumplings with cottage cheese
The classic way to prepare this dish is to use a filling made from homemade fresh cottage cheese with a dense consistency. For 1 kg of base add 2 raw eggs, 0.5 teaspoon of salt. Mix well.
If you wish, you can add a little granulated sugar and 2 tablespoons of ghee.
Such dumplings are served with sour cream or butter.
Dumplings with cherries
Now the cherry season is coming to an end. There is an opportunity to try this filling with fresh berries.
Remove the bone by hand, squeeze the juice. Add sugar. Let stand for 10 minutes. Re-squeeze the liquid. Pour some flour into the filling. (I prefer to use starch.) Stir.
The squeezed cherry juice is brought to a boil. Mix with enough sugar. Ready dumplings are poured with this syrup.
Potato dumplings
Peel the potatoes, add water, and bring to a boil. Timed 20 minutes. Drain the liquid. Grind with a blender or pusher until puree. Add a raw egg, fried onions, a piece of butter, a little potato broth. The mass is obtained of medium density. Knead well.
Put the finished dumplings on a plate, decorate with herbs, add fried onions.
Lazy dumplings
For those who do not have time to mess around with the filling, I recommend using this recipe.
0.5 kg of cottage cheese, 2 eggs, salt and sugar are mixed to taste. Sufficient flour is added. A medium density dough is prepared. Pour flour on a board, roll out a sausage with a diameter of 2 cm. Cut slices 1 cm thick with a knife. Roll in flour.
Immersed in boiling salted water. Cook for 5 minutes. Spread on a plate, served with sour cream or berry syrup.
Children like this option very much for breakfast. But I prefer real stuffed dumplings.
Little tricks
1. Ready raw dumplings are very convenient to cook in small portions for several times of cooking. I freeze the excess. I spread a plastic bag on a cutting board. Inside with a distance, so as not to stick together, I lay out the dumplings in rows. I bring it to the freezer, deepen the board. I hold the tip of the bag, at this time I remove the backing. So I lay out several layers.
2. The finished products are immersed in boiling water. Stir often at first so that they do not stick to the bottom of the pan. As soon as they float up, they stop interfering.
3. It is better to hold the seams of the dumplings if you additionally make a side in the form of a string along the edge. To do this, a piece of dough is bent to the center with a finger, 0.5 cm recede. The operation is repeated along the entire seam.
