Every summer, any summer resident faces the question: how to preserve the harvest. Let's try to figure out how to properly freeze the berries in order to give ourselves a piece of summer in winter.

It should be noted right away that you can freeze all the berries. This method of harvesting berries will allow you to preserve the vitamins and microelements contained in the berries almost in full. Before freezing, the berries must be sorted out and washed. Only ripe berries are suitable for freezing. So, most often housewives freeze strawberries, raspberries, currants, cherries, gooseberries, lingonberries, sea buckthorn, cranberries, etc.

Strawberry

First you need to wash the strawberries, and only then sort through: remove the stalks and debris. You can freeze these berries with or without sugar.

With sugar, strawberries are frozen, as a rule, immediately in a container. If the berry is large, you need to cut it in half, the small berry can be put whole. Lay a layer of berries, sprinkle it with sugar, then again a layer of berries, again sprinkle with sugar. Continue this way to the very top of the dishes, then close the lid tightly and put in the freezer.

If it is decided to freeze the berries without sugar, then the prepared fruits just need to be put on a pallet or baking sheet in the freezer, after the berries are frozen, collect them in a bag and put them back in the freezer.

Raspberries

Unlike strawberries, it is not advised to freeze raspberries with sugar, because after it will lose its shape and will be tasteless. You do not need to wash the berries before freezing: during the washing process, the raspberries choke and let the juice out, and therefore it will no longer be possible to freeze whole berries. It is best to freeze raspberries in bulk. Pour the berries into a tray or baking sheet, put them in the freezer for several hours, then pour the berries into a bag and place them in the freezer for further storage.

Currant

Before you freeze the currants, they need to be washed and dried a little on a towel (within 2-3 hours). After that, put the berries in a bag and freeze.

According to the principle of freezing currants, berries such as gooseberries, sea buckthorn, cranberries, cherries and others are harvested.

* Frozen berries should not be stored for more than a year, otherwise they will lose all their beneficial properties and taste. Ideally, they should be consumed within 8-12 months.

* Frozen berries are best stored in an airtight container to limit oxygen ingress. If the berries are stored in ordinary bags, then all the air must be removed from the bag. This can be done with a regular cocktail straw. To do this, hold the top of the bag with your hand, insert straws into it, draw air through it, quickly take out a straw and tie the bag. Zip bags are best suited for storing berries.

* Do not allow frozen berries to completely defrost and then re-freeze. In the process of defrosting, the berries are let in juice, and when they are re-frozen, they lose vitamins and taste.

* It should be remembered that the calorie content of frozen berries is the same as that of fresh ones.

* Each type of berries must be frozen separately.

* Berries absorb extraneous odors very strongly. That is why it is best to allocate a separate compartment for berries in the freezer.

* You cannot defrost berries in the microwave: with the destruction of water molecules in the tissues of the berry, all vitamins are lost.

* Defrost at room temperature. If the berries have been frozen in sugar or sugar syrup, they can be defrosted by placing the container in a saucepan of warm water.

* Cherries, cranberries, gooseberries can be defrosted directly under a stream of warm water by pouring the berries into a colander.
