Mustard is one of the most ancient and popular spices, which was used as a culinary spice three thousand years ago. In addition, mustard was also used as a medicine.

There are three types of mustard in total: black, white and brown. Moreover, the latter is also known as gray or de Sarepta.

Mustard is an annual plant that belongs to the cabbage family. Outwardly, the plant is characterized by carved hard leaves and small pale yellow flowers, collected in inflorescences. White mustard fruits look like elongated pods, which will be filled with rounded seeds, colored in white and yellow tones, with each pod containing about six seeds.

As for black mustard, its seeds are similar in color to black, they are reddish-brown and have spherical shapes. The pods of such mustard will contain about twelve seeds: round and rather tough, the color of these seeds can range from black to dark coffee. The taste of black mustard is very strong and has a noticeable pungency.

Outwardly, brown mustard is similar to black, the only difference is the leaves, which are quite wide and round at the very base, and towards the tip they begin to become much thinner. The color of the seeds can be either reddish or brown in its dark and light appearance. Compared to white mustard, its taste will be sharper, but black mustard remains the sharpest.

Mustard properties

Mustard is a melliferous plant, so honey collected from flowers will taste extremely piquant, and its aroma is incredibly pleasant. Black mustard is especially melliferous, but white mustard is considered the main supplier of both nectar and pollen.

A spice seasoning is made from mustard seeds. At the same time, black mustard gives a brighter taste, because it is she who is the raw material for the French (Dijon) mustard, which is famous all over the world. Mustard is often added to both soup and meat, fish and vegetable dishes. Also, mustard is good for pickles, and sometimes it is used for making cheeses.

Due to the rich content of useful substances in mustard, it is widely used for medical purposes, not only in folk remedies, but also in official medicine. The presence of mucus gives mustard a laxative effect. Vegetable mustard oil is obtained from mustard seeds, and the seeds also contain a lot of potassium, magnesium, protein and calcium. It is recommended to use mustard oil mixed with warm water to stimulate blood circulation. Mustard also has anti-inflammatory properties.

For the treatment of headaches and colds, so-called mustard baths are very often used. For a laxative effect, it is recommended to consume one spoonful of seeds several times a day. If you suffer from lack of appetite, then you should dissolve the ground seeds in a glass of milk and drink this mixture some time before meals.

Mustard can also help with intoxication of the body. On an empty stomach, you should drink a glass of water with a stirred teaspoon of black mustard, this mixture will provoke vomiting, which will remove toxic substances from the body.

The most widely used are mustard plasters - it is recommended to keep such a compress until the burning sensation is excessive, after which the mustard plasters are removed.

You can make mustard powder yourself: you need to grind or crush mustard seeds. It is recommended to use the ready-made powder within two to a maximum of three weeks from the date of its manufacture, otherwise the healing properties of the mixture will begin to noticeably decrease.

It should be noted that black mustard should not be used until the age of six, otherwise poisoning may occur. Patients with dyspepsia and those with urinary tract irritation should be treated with caution.
