Artichokes are very popular with many of us - they are equally good both fresh and canned. Unfortunately, it is not possible to keep artichokes fresh for a long time - they can only be stored for a few days. However, in this case, you still need to familiarize yourself with the basic rules for their storage, otherwise this nutritious product will not last even a week. So how should you store artichokes?
How to store?
As a rule, fresh artichokes keep well for no more than seven days. At the same time, it is strictly not recommended to freeze them - it is best to store artichokes in the refrigerator (in containers or in plastic bags). The fact is that when frozen, this valuable product loses its excellent taste, and its consistency also changes beyond recognition, and exclusively for the worse, as a result of which frozen artichokes become unusable.
Ideally, fresh artichokes are recommended to be eaten within a day, since during long-term storage they have a less pronounced taste, vitamins from them gradually disappear, and their structure becomes fibrous.
Only high-quality and fresh inflorescences are always laid for storage - it is better to get rid of artichokes that have begun to deteriorate in a timely manner. Moreover, in a tainted form, they are not suitable not only for storage in the refrigerator, but also for preparing all kinds of dishes, since such inflorescences can adversely affect the digestion process.
The best temperature for storing artichokes is considered to be the range from zero to one degree. At other temperatures, the risk that the structure and taste of the harvested inflorescences will not change for the better increases significantly. At high temperatures, they often show signs of strong moisture and decay, and at too low temperatures, artichokes become tasteless.
In addition to the refrigerator, inflorescences can be stored in the basement or in the cellar, as well as on the balcony or in some other fairly cool place.
As for salted and pickled artichokes, they are stored by analogy with any other blanks. The storage place for the workpieces must be dark, cool, located away from any heat sources and reliably protected from the sun's rays. Under the influence of light, artichokes stored in jars often change their color, and their structure becomes more fibrous.
It is noteworthy that artichoke varieties do not in any way affect the duration of their storage - every single variety begins to lose its excellent taste after a few days.
Useful Tips
To extend the life of artichokes, it is advisable to purchase them or pluck them along with the stems. Such artichokes are placed in jars of water (just like cut flowers), after making small cuts at the tips of their stems.
Opened artichokes are strongly discouraged from storing in the vicinity of foods with a rich aroma, as well as near any cooked dishes - if you ignore this rule, the inflorescences will deteriorate much faster.
In order to preserve artichokes for several weeks, they must be filled with salt water (at the rate of 20 g of salt for each liter of water) and transferred to a cool place. And for a month they can be kept in pickled form (sugar, citric acid, salt and water are taken to prepare the marinade, and the amount of sugar should exceed the amount of salt by exactly 10 g).
When it comes to washing artichokes, it is best to wash the harvested buds just before cooking or eating them. If the washed artichokes are sent for storage, the moisture accumulated in them after rinsing will significantly accelerate the process of moistening the petals and their subsequent rotting.
