This year Maslenitsa week starts on 24 February. With what to prepare a treat so that it does not get bored during a whole week of winter fun? Here are a few culinary secrets to your attention so that even the first pancake does not become lumpy. Dough recipe for perfect pancakes
There is nothing easier than baking pancakes. But in order for everything to go like clockwork, first of all you need to learn how to cook the correct dough that will not burn on the frying pan.
Pancakes can be cooked in water, whey, kefir, milk. Still, it is better to give preference to milk. It is thanks to this ingredient that the pancake does not stick to the pan as much as it does on the same whey.
Another "secret" ingredient is vegetable oil. Instead of greasing a skillet with it, add butter to the dough itself. You need very little of it, but the pancake will be moderately fat, and the dough will acquire a characteristic plasticity.
So, to prepare the dough, you will need the following ingredients:
• milk - 0.5 l;
• egg - 1-2 pcs.;
• flour - 10 tablespoons. spoons with a hill;
• vegetable oil - 1-2 tablespoons. spoons;
• sugar - 1 tea. a spoon;
• salt - 0.25 tsp. spoons.
Beat eggs with sugar and salt. Combine with milk. After that, gradually add flour to the egg-milk mixture - spoon by spoon. Ten spoons is an approximate amount. Each has its own size of cutlery - some have a deeper spoon, others smaller and smaller. Therefore, watch out for the consistency of the dough. Its density should become similar to kefir. Then add vegetable oil.
And the last secret - the dough should be allowed to stand for at least half an hour. Then it will be lump-free. Then you can bake in a dry skillet.
For one pancake, 2-3 tablespoons of dough are poured into a preheated frying pan. Fried on both sides. It is best not to try to turn the pancake until it is well browned on one side. When it's fried, it will begin to rise on its own in the pan.
Traditional toppings for pancakes for Shrovetide
Pancakes can be eaten empty. But with the filling it is still tastier and more fun.
Pancake week is called meat week. At this time, we are already starting to prepare in Great Lent and exclude meat from our diet. But dairy products are still allowed to be consumed. Therefore, one of the traditional fillings for pancakes for Shrovetide is cottage cheese.
To prepare the curd filling, an egg, a little salt and sugar are added to the curd. All ingredients are thoroughly mixed. You can grind with a fork or through a sieve so that the curd becomes more homogeneous. This filling goes well with raisins and dried apricots.
Then spread this mixture on a pancake and roll it into a tube. Before using, heat it in a pan so that the egg is baked with cottage cheese. Served warm and with sour cream.
Another option for a lean filling for pancakes is with mushrooms and cheese. Cut the champignons into thin slices and fry in a skillet with onion half rings. Season with salt and black pepper. Place the filling on the pancake and sprinkle with grated cheese. Roll up with a tube or envelope and heat in a skillet so that the cheese melts and glues the mushrooms. Serve with sour cream or other sauce.
Hearty fillings
If you don't fast, or fall into the category of people who are allowed not to fast, you can make pancakes with a more filling filling. For example, with meat, chicken or liver.
Fry the chicken liver with onions in a skillet. Season with salt and pepper. Grind in a blender until a paste-like mass. You can add a boiled chicken egg, grated. The filling is spread over the pancakes and wrapped in an envelope.

Pancakes - for dessert
Why not treat yourself to some sweet pancakes too? Make an apple-filled dessert. To do this, peel the fruit and grate it on a coarse grater. Send them to a hot skillet. The apples will let the juice out, let the excess liquid evaporate. Then the fruit is sprinkled with cinnamon and sugar. The filling is ready!
