The bitterness inherent in the zest will give a unique taste and aroma to the jam. Moreover, you can cook a zucchini delicacy both from young fruits and from old ones. In the latter case, the zucchini will need to be peeled and seeds removed. Many culinary experts still assure that the most delicious jam is obtained from young zucchini. It just melts in your mouth. The process of making squash jam is no different from the process of making any other jam. So, here are some recipes.

Zucchini jam with lemon and orange

We need:

* zucchini - 1 kg

* sugar - 1 kg

* half lemon

* half an orange

Preparation

Wash the zucchini thoroughly. If the fruit is overripe or lay down, then remove the peel and seeds from it. Cut into small cubes.

Add sugar, mix well and leave for a while. As soon as the juice comes out, put a bowl of jam on the stove and cook, stirring all the time.

Grind citrus fruits in a blender or scroll through a meat grinder, remove the bones. Add the resulting lemon-orange mass to the jam, cook for another half hour.

Checking the jam for readiness is easy: just put a drop of jam in a glass of cold water. If it's ready, the drop will turn into a soft ball and won't run out.

The jam should be poured hot into pre-sterilized jars. We roll it up, turn it upside down, cover it and leave it to cool completely.

Zucchini jam with lemon and spices

Ingredients:

* zucchini - 1 kg

* sugar - 1 kg

* water - 1 glass

* lemon - 1 pc.

* cinnamon, cloves - to taste

Preparation

Prepare the zucchini: wash, peel, remove seeds (if the fruits are old), cut into cubes. After that, put the zucchini in boiling water for 2-3 minutes. After that, fold the zucchini in a colander, let the excess liquid drain.

Prepare syrup. For 1 kg of zucchini, a glass of water and a kilogram of sugar, mix everything and put on the fire, boil the syrup and add scalded zucchini to it. Wash the lemon and chop it together with the zest. Add to zucchini, season with cloves and cinnamon to taste. Cook the jam until it thickens.

Pour the hot jam into jars and roll up.

Zucchini jam with orange

You will need:

* zucchini - 1 kg

* sugar - 1 kg

* orange - 1 pc.

Preparation

Wash the courgettes, cut into cubes. Wash the orange and cut into slices or semicircles with the peel. Remove the bones. Put all the prepared foods in a container in which the jam will be cooked, add sugar and leave for 5 hours.

This jam is cooked in three stages. The first stage is 20 minutes from the moment of boiling, the next two - 15 minutes each. The interval between stages is 5 hours. During this time, the jam has time to cool completely. After the third run, pour the hot jam into jars and roll up. This method of making jam allows you to preserve the shape of the pieces: the zucchini does not boil over, and the orange slices are preserved intact, however, they boil down a little and, due to this, decrease in size. This jam really tastes very much like pineapple.
