How to choose?
Choosing ripe mangoes is not so difficult: when squeezing the fruits, you should feel a slight elasticity, but in no case toughness. The fruits themselves should be round, and their skin should be smooth. Ripe fruits also have a rather rich sweet aroma.
Hard fruits without a corresponding aroma usually indicate that they have not yet fully ripened, and the wrinkled skin of a mango is evidence that the fruit was removed from the tree ahead of time.
When choosing a mango, it is important to remember that all the spots, bruises or scratches on them can significantly reduce the shelf life of these delicious fruits.
As for the color of mango, you should not rely on it entirely, since it can be very diverse in ripe fruits: green, and orange, and yellow, and red. Typically, the color of a mango is determined by its variety. At the same time, green and yellow fruits are considered to be the most delicious.
How to store?
Ripe mangoes are stored at a low temperature (no more than ten degrees) for no more than three to five days. The best place for storing them is, of course, the refrigerator, but it is not recommended to wrap the fruits either in bags or in film before being sent to the refrigerator - they must "breathe".
If you really want to preserve ripe mango pulp for several months, you can resort to using a freezer. To freeze these juicy fruits, they are first peeled and cut into medium-sized pieces, and then sent to the freezer. By the way, the taste of frozen mango does not suffer or change at all. True, the structure of the fruit can sometimes become looser and softer.
And in order to allow unripe fruits to ripen, they must be stored at room temperature - after a few days (maximum in a week), cute mangoes will gain sweets. In order for them to ripen as soon as possible, you can use the following method: the prepared fruits are wrapped in newspaper or some other paper, and then laid on sunny windowsills - in this case, they will ripen from two to five days. Once ripe fruits become soft and aromatic and juicy, they can be moved to the refrigerator or eaten immediately. Leaving ripe mangoes stored at room temperature is strongly discouraged, as they will begin to rot very quickly. Do not put unripe fruits in the refrigerator - the process of ripening in the cold always stops.
Dry mango
Mangoes are excellently preserved in dried form - such fruits are not only stored for a long time, but also have a great taste. In order for the fruit pulp to dry properly, it is recommended to pre-blanch it in hot sugar syrup. By the way, the concentration of syrup in this case can be any - here you can completely rely on your own taste preferences.
After the mango slices are well blanched, they are placed on a baking sheet covered with foil and sent to the oven (the ideal slices are 2-3 mm thick). As for the temperature, it is set at forty degrees, and the oven door must be kept slightly ajar.
Dried fruits can be stored both in the refrigerator and in the kitchen cabinet, the most important thing is that they do not receive excessive moisture.
