Honeysuckle berries have been used in folk medicine for hundreds of years. This fact is associated with the high content of vitamins, organic acids and minerals. It's hard to believe, but in terms of the amount of ascorbic acid (aka vitamin C), honeysuckle prevails over citrus fruits. And what can we say about mineral substances! There are much more of them in the composition of honeysuckle than in any other berries and fruits. Potassium, copper, iodine, phosphorus are just a small part of the elements contained in honeysuckle.
Fresh berries boast tonic and refreshing properties. In addition, they are a prophylactic agent for diseases of the cardiovascular system. They are recommended for atherosclerosis, anemia, hypertension, and liver diseases. And honeysuckle also increases immunity, improves the absorption of food intake and, finally, eliminates headaches.
Even after heat treatment, however, for a short time, honeysuckle berries do not lose their beneficial properties. They can be introduced into the diet of people suffering from gastritis, gastric and duodenal ulcers, memory loss and decreased performance. Berry dishes are also appropriate on the dietary table, because they contain a minimum amount of calories, of course, if the portion is not flavored with a few tablespoons of sugar.

Recipe 1. Cake with honeysuckle and cream
Delicate and melting in your mouth, the biscuit will give incredible emotions, especially when combined with fresh honeysuckle berries, crushed nuts and butter cream. Its preparation will not take much time. It is enough to separate the yolks from the whites, then beat the whites - first at a low speed, then at a high speed, adding granulated sugar and a little vanilla. Next, beat the yolks and slowly introduce the sugar-protein mass, without turning off the mixer.
Then sift the flour and stir gently with a spoon. Pour the finished mass into a mold, previously greased with butter, or lined with parchment, evenly distribute the honeysuckle berries on top and send to the oven, preheated to 180C, until a golden crust is obtained. After removing from the oven, you can grease with butter or any other and sprinkle with crushed nuts.
Recipe 2. Smoothie with honeysuckle
Smoothie with honeysuckle is a wonderful drink of harmony and beauty. It will give you a good mood and energize for several hours. The smoothie is a thick, but very delicate cocktail that includes fruits and berries, as well as yogurt, milk, kefir or cream. You can combine the ingredients as you like. For example, dieters will love a smoothie made from peaches, honeysuckle, and kefir. All components must be whipped with a blender, and the finished cocktail must be cooled and decorated with a sprig of mint.
Recipe 3. Honeysuckle mousse
Honeysuckle mousse will be an excellent dessert at a festive event. For cooking, it is necessary to boil the honeysuckle berries for 4-5 minutes, adding a small amount of water, then grind the boiled mass through a sieve. Next, add granulated sugar (at your discretion), a small amount of lemon peel grated on a fine grater and, if desired, vanilla. Boil the mass again for 5 minutes, then add condensed milk, beat with a blender, pour into glasses and send to the refrigerator. For density, you can add a little semolina to the mousse.
