The tendency to corrosion is the only drawback of a cast-iron frying pan, cauldron, pot. Let's talk about how to remove rust and how to use it so that it does not appear

Why does the frying pan rust

Metal oxidation occurs when kitchen utensils are used improperly. I will name 6 reasons for the appearance of rust.

1. Incorrect preparation of new dishes for use. Cast iron does not rust if there is a protective / non-stick layer, which is created by annealing a new product with salt, then greasing with oil / animal fat and baking in the oven.

2. Damp room where dishes are stored.

3. Poor or untimely washing.

4. Cast iron rusts from inaction, this happens if you have not used a frying pan or cauldron for more than 3 months. The protective layer is strengthened with regular use.

5. Detergents on an alkaline basis, destroy the protective layer, after drying they leave reddish spots - signs of the onset of corrosion.

6. Scratches that appear when using metal brushes, abrasive materials, violate the integrity of the protective coating, which leads to the appearance of rust.

How to quickly remove rust

With the appearance of oxidative reactions, rust in the pan is removed in two steps. If done correctly, rusty deposits will be removed and the non-stick layer will be restored.

First step: getting rid of rust

Actions are aimed at neutralizing damage. Strong plaque can be removed with an iron / copper sponge. Weak spots will be cleaned with abrasive powders. To do this, you can take Komet, Chistin, Pemolux, Biolan, etc.

Small rusty deposits can be easily removed by baking soda. A thick gruel is made from it and rubbed into problem areas with a brush, left for a couple of minutes, washed off with water. If there are signs of a defect, the manipulations are repeated again.

A popular remedy in the fight against rust is Coca Cola, a drink that successfully replaces chemical agents and quickly cleans cast-iron dishes from rust. It is necessary to fill the inner surface with Cola, heat to a boil, leave for half an hour, rinse, dry with a towel.

Table salt acts as a mild abrasive. Salt is used to clean cauldrons and grill pans: they are poured onto the surface, moistened with water and rubbed until rusty spots disappear with a cellulose napkin or sponge.

At the first sign of rye, vinegar is used. The dishes are filled with a solution (for 1 glass 2 tbsp. L.), Left for 2 hours, washed with cold water, dried.

Second step: creating a protective layer

Cast iron dishes, after cleaning, necessarily go through the second stage of processing - a protective layer is created that closes the pores of the cast iron, small cracks, microcracks. This coating prevents food particles from sticking during cooking. The instructions for creating a cast iron protection are done in three steps.

1. Vegetable or melted fat / oil is poured into the pan - 1 tbsp. l. The inner surface must be completely greased. Take oil suitable for frying - olive oil, with green, yellow lids will not work, since it is not intended for frying and smokes heavily.

2. The dishes are left to soak for 10-15 minutes. At this time, the oven is warming up. For processing, you need at least 180 degrees.

3. Excess grease / oil is removed with a paper towel. For firing, the dishes are placed upside down on a wire rack and kept in a working oven for 40-60 minutes. After turning off the fire, do not take out the dishes. With gradual cooling, micro cracks roll better, creating a strong protective layer.

After firing, pans, cauldrons, grill pan, pots become ideal for cooking. They will not rust after use.

Rules for using cast iron cookware

Thanks to modern technologies, nowadays, convenient-to-use dishes are produced: with non-stick, ceramic and other coatings. But nothing more durable than cast iron has yet been invented, products in such dishes are tastier and healthier. To prevent a cast-iron pan or cauldron from rusting, follow a few rules:

• store in a dry place;

• wash with soft sponges and liquid detergent;

• do not leave wet - wipe dry after washing;

• do not scrape burnt food with metal objects, soak and then wash in the usual way;

• do not use aggressive chemicals;

• to preserve the protective layer during prolonged inactivity, leave the dishes with grease inside.

Never clean rust on dishes with rust converters, solvents, neutralizers. Cast iron cookware will last forever if used properly.
