This delicious drink is prepared in various ways. It should be borne in mind that the zucchini compote itself does not have a pronounced taste. But if you add any fruit (pineapple, apple, citrus) or berries (quince, sea buckthorn, etc.) to the zucchini, then the compote will acquire an unusual amazing taste. Some housewives, in addition to fruits and berries, add various seasonings and spices to the compote. Zucchini is a vegetable that you can experiment with all the time, the main thing is to turn on your imagination. It is known that the preparation of zucchini compote for the winter came to us from Bulgaria.

Before you start rolling zucchini compote, you need to study some of the nuances:

* only young fruits are suitable for compote. This is explained by the fact that they contain a large amount of juice, therefore, the taste of the compote will be more intense;

* you need to roll up the compote only in sterilized jars;

* it's not a secret for anyone that very often compote and marrow jam are confused with compote and pineapple jam. To further emphasize the pineapple flavor, you can use not only water, but also pineapple juice from the pack (in proportions 50/50). The same effect can be achieved by adding sea buckthorn or cherry plum to the drink;

* only the hard part of the vegetable is suitable for making zucchini compote, the pulp is absolutely useless, as a rule, it is cut out and thrown away;

* if the compote is prepared in compliance with the technology, then it can be stored for a year.

Zucchini compote (classic recipe)

To prepare a classic zucchini compote (without additives), we need:

* young zucchini - 1 pc. medium size

* water - 2 glasses

* sugar - 2 cups

* vinegar essence (6%) - 0.5 tsp

Preparation

Wash the zucchini thoroughly and wipe dry. Cut it in half lengthwise. Remove the pulp completely. This can be done with a teaspoon or knife. Cut the zucchini into pieces (cubes, half rings, and so on, as you like) and put in a saucepan. Add the required amount of water and boil over low heat. Then add sugar to the saucepan. Continue cooking until the zucchini becomes transparent, stirring constantly. After the compote is ready, remove it from the heat and add the vinegar essence. Mix well, pour hot into jars and roll up. You can store compote at home in the closet or in the cellar.

Zucchini compote with oranges

To prepare such a compote, we take:

* zucchini - 2 kg

* oranges - 0.5 kg

* sugar - 2 kg

* water

Preparation

All ingredients must be thoroughly rinsed and dried. Peel the zucchini, remove the pulp and seeds. Cut the courgettes into equal cubes or pieces. Peel the oranges and cut them into wedges. After the water boils, add zucchini, oranges and sugar into it. The compote is prepared for about half an hour. After this time, the drink is poured into sterilized cans and rolled up.

Zucchini compote with sea buckthorn

We will need:

* zucchini - 1 kg

* sugar - 1 glass

* sea buckthorn - 400 g

* water - 1 l

* mint - 1 sprig

Preparation

Sort out the sea buckthorn from debris and twigs, wash and dry. Prepare the courgettes as usual: peel, remove pulp and seeds. Pour water into a saucepan, put on fire and heat. Then add the diced courgettes for 5 minutes. After that, throw the zucchini in a colander (do not drain the water, catch the zucchini with a slotted spoon), and then put them in pre-prepared jars. In addition to zucchini, put sea buckthorn and mint in jars ("by eye"). Top up the cans with water, in which the zucchini was boiling, and roll up.
