Blueberries are an incredibly tasty berry! It is very useful for the eyes, perfectly cleanses the intestines and is an excellent prevention of cancer. So don't skip a handful of fresh blueberries! Of course, it is not always possible to enjoy fresh berries, and, unfortunately, not everyone knows how to store them correctly. It's time to fix this, because blueberries can be stored in the refrigerator for only five to ten days

Bottled storage

Freshly picked ripe blueberries are carefully cleaned of needles, leaves and other debris. Empty bottles must be washed in advance and thoroughly baked in the oven for two hours. Then they are cooled and the prepared berries are poured into them, gently shaking the container so that the berries settle down as tightly as possible. And then the bottles are corked, poured with sealing wax and sent to storage in a cool place.

Evaporation of blueberries

This method of storing blueberries is incredibly economical. The sorted berries are poured into glass jars, after which these jars are placed in a saucepan filled with water, which, in turn, is placed on the stove - as a result, a water bath should be obtained. As soon as the berries begin to settle, the blueberries are poured into the jars again, continuing to do this until they stop settling. And then the jars are rolled up and sent for storage along with the rest of the blanks.

Before freezing, blueberries must be sorted out, choosing exclusively ripe and large berries. Then these berries are washed, dried and poured onto a pallet made of cardboard, the height of the sides of which reaches 2 - 2, 5 cm. When all the blueberries are on the pallet, the container is sent to the freezer. Then the frozen berries are sorted into polyethylene bags, sealed and placed in the freezer for long-term storage.

How to dry berries?

You can also dry blueberries - then they will be stored for a very, very long time. Berries for this purpose are best harvested in sunny and warm weather. As soon as the collection of blueberries is over, the berries should be sorted out immediately, eliminating crushed and all damaged specimens. It is also important to try to get rid of all "unnecessary" details - stalks, leaves, etc. Berries that have been selected for subsequent drying are rinsed (it is not forbidden to do this through a colander) and immediately dried (for this you can use a sieve).

Blueberries are usually dried in two ways - in the sun or in dryers. In the latter, they begin to dry it at a temperature of about forty to fifty degrees, and as soon as the berries wither slightly, the temperature is increased to sixty to seventy degrees. In this case, the baking sheet with berries must be systematically shaken during drying - this is necessary so that they mix and dry evenly. Ready dried blueberries are stored in a dry place for up to two years.

The blueberries are sorted out, washed and dried, after which they are distributed in hot sterilized jars and poured with blueberry juice heated to sixty-five to seventy degrees. Then the jars are covered with lids and pasteurized: liter - for twenty minutes, and half-liter - for about ten minutes. The temperature in both cases should be 90 degrees. And this delicious delicacy is stored exclusively in a cool place.

Sorted, washed and dried berries are scattered in jars, covered with a small amount of sugar and well shaken. After that, the jars must be closed and sterilized. Containers with a volume of half a liter are sterilized for about twenty minutes, and containers with a volume of 0.7-0.9 liters - for twenty-five minutes. In both the first and second cases, it is done at a temperature of 90 degrees. And as soon as the sterilization is completed, the jars are immediately cooled.
