Rowan jam
Of course, chokeberry (chokeberry) is most often used in cooking. But nevertheless, do not belittle the dignity of the red rowan. The taste of this berry is not so sweet, but nevertheless, the jam from it turns out to be very tasty, and most importantly, healthy.
The most important advice is to pick the red rowan berries correctly and on time. Do not rush to pick: the berries must ripen, otherwise they will have a tart, bitter taste and the jam from them will also taste bitter, even if you add a lot of sugar. It is best to harvest rowan after the first frost. If, nevertheless, it so happened that you picked the berries earlier, then hold them for a while in the freezer before cooking.
Red rowan jam recipe
To prepare this delicacy you will need:
* red rowan - 1 kg
* sugar - 1, 4 kg
The rowan must be carefully sorted out: separate the berries from the branches, remove the crumpled and damaged fruits. Rinse the mountain ash in cold water and immerse in boiling water for 3-5 minutes, so that the berries become soft, but not boiled.
Pour some water into the sugar and cook the syrup. Dip the berries in hot syrup and leave for a couple of hours. Then we cook the jam over medium heat. During the entire cooking time, the jam should be removed from the heat several times, mixed, and the foam removed. Keep the finished jam for another day indoors and only after that pour it into sterilized jars and roll up.
Chokeberry jam with cherry leaves
To prepare this amazing dessert you will need:
* chokeberry - 2 kg
* sugar - 1, 6 kg
* cherry leaves - 200 g (you can take more).
Cherry leaves are involved only in the preparation of syrup. They need to be thoroughly washed and boiled in boiling water for about 20 minutes. Then strain the cherry broth, add sugar and boil the syrup.
Separate the rowan berries from the twigs, rinse. Pour hot syrup over them and simmer for 5 minutes.
Further, the preparation of the jam will take place in several stages: the boiling process will alternate with the cooling process. So, after the rowan has been boiled for 5 minutes, remove the dishes from the heat and leave to cool for 8 hours. After that, heat up again, boil a little and cool again. Repeat the procedure a couple more times. Then pour the jam into sterilized jars and roll up.
Chokeberry jam is most useful, because even with heat treatment, it retains a maximum of vitamins and nutrients. Very often housewives grind raw mountain ash with sugar. This method of harvesting berries is simple and convenient, but you only need to store it in the refrigerator or cellar. On cold winter evenings, it is good to drink tea with rowan jam. In addition, due to its stringiness, it is ideal for home baking.
