How to store?
Green peas are usually harvested first. And since fresh it is able to persist for a very short time, it is almost always canned and rolled up in glass or tin cans. In canned form, this delicious product can be easily preserved for two years. In addition, green peas can be frozen - in this form they will be perfectly stored for ten months.
To keep the peas at home, first boil them (a minute or two, no more), and then rinse thoroughly with cold water. Next, the peas are poured onto a pallet and sent to an oven heated to forty-five degrees. After a while, it is allowed to cool, and then the drying process is repeated, only this time the temperature in the drying cabinet should be about sixty degrees.
Ripe dry peas are excellently stored for several years. When storing it, it is important to ensure that all its seeds are fully ripe and well dried. In addition, peas must be 100% tight, otherwise various harmful insects can enter it.
In apartment conditions, it is recommended to store peas in a container tightly closed with metal lids. Lids equipped with a vacuum suction system are considered another excellent option for ensuring tightness.
Features of storage of dry peas
Peas purchased dry should be stored in as dark and regularly ventilated places as possible. At the same time, it is important to make sure that the air humidity in them is not increased. As for the container, almost any container is quite suitable for storing dry peas - plastic containers, glass jars, and clean cloth bags. And so that the peas retain their structure and do not deteriorate, it is advisable to put tiny homemade cloth bags filled with salt in containers.
Do not forget that the peas intended for storage should in no case be wet, otherwise they will deteriorate very quickly, and almost immediately parasites, rot or mold will appear in it. Pea grains must be crumbly, but if they begin to stick together, then this is a direct evidence of improper storage of peas.
In the event that the peas were purchased in the manufacturer's packaging, after opening it, the rest of the product is transferred to a new container with a tight lid or to a bag. By the way, peas cannot be stored on shelves located in the immediate vicinity of the gas stove - under the influence of heat they instantly deteriorate. And all stored peas must be systematically inspected - in case of the appearance of foreign odors, mold or signs of decay, this nutritious product will have to be disposed of.
Store boiled peas
It is quite permissible to keep boiled peas in the form of porridge in the refrigerator for up to forty-eight hours - after this time, it will definitely start to deteriorate. As for pea soups, they can be stored for up to three days - if during this time they are not eaten, then the remnants of cooked dishes must be poured out.
It is impossible not to mention soaked or steamed peas. It is no secret that before starting to prepare various dishes from peas, many hostesses steam it with boiling water or soak it in cold water - this is done so that strong peas are quickly cooked. In this form, peas are allowed to be stored for no more than twelve hours, since after this period the fermentation processes begin in it.
