Compote

We need the plum itself, water and sugar.

Cooking syrup: half a glass of sugar in a glass of water.

We wash the fruits thoroughly and make a couple of punctures with a needle in each. Put the plum in hot water (no more than 85 degrees) for a couple of minutes. Next, cook the syrup, thick in consistency. We put the plum in jars, fill it with syrup. Turn the rolled up cans over and leave to cool.

Plum Jelly

Plum jelly, which can be tastier, it can be served with breakfast as a dessert. And also a great treat in winter.

For cooking, we use any plum that you have. Sugar is adjusted based on the sweetness of the fruit.

Ingredients:

1 kilogram - plums and sugar

200 grams - pectin

Cooking method:

1. Wash and dry the plums.

2. Cut in half, remove bones, cut into pieces.

3. We put the pan on the fire and pour the prepared plums there.

4. Add pectin and mix. Sugar is added to taste.

5. Stirring constantly, for quick dissolution of sugar, cook for 1 minute and remove from heat.

6. Remove the formed foam with a slotted spoon and mix again.

7. We prepare cans, provided that the procurement is done for the winter period. Wash thoroughly, sterilize, pour hot jelly and roll up.

Jelly can also be consumed after cooling. Keep refrigerated.

Plum jam

For cooking we need:

Plums and sugar - 1 kg

Preparation:

We wash, scald the plums with boiling water, remove the skin, remove the seeds. We put in enameled dishes, sprinkle with sugar, leave for a couple of hours. Add water 250 ml, cook over low heat, until boiled. Spread the jam on pre-prepared jars, roll up.

Pickled plums

For the marinade:

Water - 1 liter

Sugar - 500 grams

9% vinegar - 150-200 grams

Cloves and allspice - 5-6 pieces

A pinch of cinnamon.

Cooking method:

Boil water, add spices and sugar, cool, filter, add vinegar.

We wash, pierce, put plums on banks, fill with marinade.

Sterilize for 3-5 minutes, roll up, turn upside down, cover with a blanket.

Pickled plums are a good side dish for meat, fried and fish dishes.

Harvesting prunes

If you have a lot of ripe plums, you can easily cook an equally healthy product such as prunes. Let's take a closer look at the procurement method.

To harvest prunes, we need ripe and overripe plum fruits. We wash it out and either remove the bone, or leave it (an option for an amateur), but in terms of its usefulness, the option with a bone retains more nutrients (which we mentioned earlier).

The next step: blanch the plums for 25-35 seconds in a soda solution (100 grams of baking soda and 10 liters of water) at a temperature of 90 degrees. After this procedure, it is necessary to rinse the plums in hot water. Then we can start drying. We carry it out with the help of the oven, monitoring the temperature so as not to spoil the product.

The process can be conditionally divided into several stages:

1. Put the prepared plum on a baking sheet. Preheat the oven to 50 degrees in advance and leave to dry - 3-4 hours.

2. Take out the baking sheet, stir and cool the plums. At this time, we warm up the oven to 60-70 degrees and place the plums in it for another 5 hours.

3. We take out again, cool and stir the plums, and at this time bring the oven to 80-90 degrees. We place the almost finished prunes for another 4-5 hours.

If you want to make it shiny, then at the very end of drying, raise the temperature to 100-120 degrees.

Storage
