Every weekend our grandmother's apartment was filled with the aromas of freshly baked pies. We have always taken an active part in their preparation. Unobtrusively, the older generation accustomed us to housekeeping, instilled a love of cooking.

The grandmother added the necessary ingredients to the pan and asked for help in kneading the dough. Timed 20 minutes, making sure that the work was done carefully and with diligence. The base turned out to be lush, soft to the touch. I still like to bake pies according to her recipes.

Pie dough

Pour 3 cups of warm water into a saucepan. Add 30 g raw or 1 pack of dry yeast, 4 tablespoons of sugar, 6 heaped tablespoons of flour. Mix thoroughly, leave for 15 minutes.

As soon as the mass begins to foam, put 2 teaspoons of salt, 1 glass of vegetable oil. Gradually add 8 glasses of flour. Knead for 20 minutes. Add flour if necessary.

The consistency of the dough is soft, plastic, without lumps, does not stick to the hands. We put it on the board. For pies, cut into small pieces with a knife, form koloboks from them. We wait 20 minutes, then roll it out. We spread the filling. We pinch the edges, give an oval shape. Spread evenly on a greased baking sheet with the seam down. We leave in a warm place (on top of the stove) for lifting.

At this time, we form koloboks for the next game. By the time they roll out, they will rise and become airy.

We heat the oven to 180 degrees. We turn down the gas, put the pies on the middle level. We time out 25 minutes. Turn the baking sheet over the other side, keep it for 20 minutes. Baking is brought to a golden color.

Lubricate the finished products with vegetable oil or melted margarine on top. We leave on the board until it cools completely.

Each housewife has her own shape of buns. Papa's mom loved to spin them in a spiral. Often in childhood, we competed among ourselves who would spin up and eat an incredibly tasty curl faster. How are these baked goods made?

A piece of dough is rolled out of medium thickness. The ideal option is a rectangle. Spread on top with melted butter or margarine. Sprinkled with granulated sugar from the heart. If desired, evenly washed and steamed in boiling water raisins or any other candied fruits are added. It is wrapped in a roll.

It is cut with a knife into pieces 2 cm thick. It is laid out on a pre-greased baking sheet with a spiral up. Time is given to distribute. It is baked in the oven for 25-30 minutes.

The second grandmother baked buns in the form of two paired snails. I have never seen such a form in anyone else. This was her signature recipe.

Cut into small pieces of dough, as for pies. We form koloboks. Roll out, smear the surface with butter, sprinkle with sugar. Bend the edges to the center on both sides. In the same direction, we put the product in 2 layers. Next, we make a fold in the transverse direction. We cut with a knife in the middle from the side of the fold, not reaching the end of 2 cm. We unfold the curls from the center to the edge. It turns out two snails

If, at the last stage, fold the dough in a transverse direction from the edges to the center and cut from the fold on both sides, you get a butterfly.

Little tricks

1. The first batch of pies takes a little longer to bake. Usually 50 minutes, the next 35-40 minutes. At the end of the process, make sure that the baked goods do not burn. The time for each oven is strictly individual.

2. To prevent the bottom from burning, I put 2 red bricks or dishes with water on the bottom. They distribute heat evenly.

3. It is more convenient to lubricate finished products with a silicone brush. I used to use a regular paint brush. Hair periodically crawled out of it, creating inconvenience.

4. Leave a space of 1-2 cm between individual pies. So that when the dough increases, they do not close.

5. To make the surface shiny and browned, I use egg yolk glaze. I apply it 10-15 minutes before the end of the cooking time.
