Appetizing blackberry never ceases to beckon us with its pleasant appearance and delicious taste. This wonderful berry came to us from distant America - there it can still be found almost everywhere. And on the territory of Russia, most of all blackberries grow in the warm and welcoming Krasnodar Territory. However, garden blackberries often take root well even in gardens near Moscow. How can we keep this berry longer so that at any time of the year we have the opportunity to feast on it?
How to prepare berries?
Berries intended for storage must be ripe - blackberries are simply not capable of ripening at home. All berries must be cleaned of debris: twigs, leaves and insects accidentally caught in the harvest. And they also need to be sorted out, rejecting spoiled and crumpled copies. Then they wash the blackberries - so as not to accidentally crush the berries, it is better to do this under the shower, and not under the tap. The washed blackberries are transferred into a colander and, while they are drying, the tails are neatly cut off from the berries.
To make it easier to break off the tails, first turn them inside each berry with a light circular motion, after which they begin to gently pull for them. Washed and peeled berries are extremely important to dry thoroughly.
Freeze the blackberry
Freezing is the best way to maximize the health benefits of juicy blackberries. You can freeze this wonderful berry in two different ways. The best way is to freeze in the freezer, but not regular freezing, but using the quick freeze option. The berries to be frozen are laid out in one layer on a clean tray, which is then sent to the chamber with a pre-set minimum temperature. In the absence of a tray, it is quite possible to replace it with a cutting board. After about an hour, when the berries are frozen, they are transferred to polyethylene bags or plastic containers and placed back in the freezer.
To freeze blackberries in the second way, you will need a lot of containers or packages - the berries are distributed over them in such a way that each portion is enough for exactly one time. This is due to the fact that you cannot re-freeze the blackberries, respectively, the entire thawed portion must be used immediately. Therefore, it is better to calculate your strengths and capabilities in advance. Having packed blackberries in containers or sachets, the berries are sent to the freezer for a day. Both containers and packages must be open. And after a day, the containers can be closed with lids, and the bags can be tied (preferably not very tightly). In this way, you can easily freeze any amount of blackberries.
Blackberry pureed with sugar
Another great way to preserve blackberries, which is practically not inferior to freezing in terms of preserving useful properties - vitamins in berries are preserved due to the lack of heat treatment. To use this method, you need to select only fresh and ripe berries. By the way, a little crumpled (not spoiled!) Berries are also quite suitable.
For each kilogram of blackberries, they take from one to one and a half kilograms of sugar - the more accurate dosage depends solely on personal preferences: if you want the preparation to be sweeter, they take more sugar. The prepared berries are covered with sugar, after which the workpiece is thoroughly ground until smooth using a wooden crush. Then the grated mixture is allowed to brew in a cool place for twelve hours. After making sure that the sugar has dissolved completely, the mixture is thoroughly mixed again with a spoon, and then they begin to distribute into the jars, rolling them up with metal lids or closing with plastic lids.
