However, many people prefer to purchase a convective apparatus, since the unconditional harmlessness of infrared rays has not yet been proven by scientists, and such a dryer costs an order of magnitude more.
Big or small?
The dryer capacity depends on the number of pallets. Most often there are dryers from 3 to 8 "floors". Some models can dry up to 12kg of product. However, such giants are expensive and not very convenient to store them in the kitchen. When choosing a volume, you should be guided by how many products you plan to dry at a time.
Is it warm from above or from below?
Heating elements in dryers are located either at the top or at the bottom. The most practical choice would be an apparatus with an upper heating element, since at the bottom it is less protected from moisture, which is more likely to render it unusable.

Indeed, the drying speed is directly related to the power of the dryer: the more powerful it is, the faster the food will dry. But you shouldn't overdo it. After all, the power must still be provided with the proper electricity, which, unfortunately, is not free. Therefore, it is best to purchase a dryer with a capacity of 350 to 450W.
Do we regulate the heat ourselves?
In the assortment of stores, you can find dryers with a thermostat, which helps you choose the temperature you need on your own. This can be very convenient, especially for delicate drying.
Is it safe?
The main safety parameter of the dryer will be the presence of such a useful function as auto shut-off. This is necessary in order to avoid overheating, because the drying of products is carried out at very high temperatures. By switching off by itself, the machine will not only protect you from a possible fire, but also extend its service life. The presence of a fan can also protect the dryer from overheating, which also reduces the drying time. Premium devices are equipped with as much as double protection against overheating and are able to dry several types of food at the same time, without mixing their aromas.
