* The fourth stage is freezing. This is the last and most important stage. Here you need to take into account the fact that the freezing process itself must go through as quickly as possible. Therefore, it is better to freeze fruits in small portions - from 200 to 600 g. Having put the fruits in a container, you should shake it well to reduce the layer of air between the fruit slices. In addition, you can freeze the fruits on a baking sheet or plate, and then put them in a prepared container. So, the fruits will not stick to each other and will not let the juice out.

Useful Tips

* Remember that mold is resistant to low temperatures, and therefore will destroy the fruit even in the cold. That is why spoiled or damaged fruits should not be frozen.

* If you do not have a separate freezer and you will be freezing fruit in the freezer of the refrigerator, then prepare the freezer for this. You need to completely defrost the refrigerator, empty the freezer as much as possible, wash it, wipe it dry and turn on the refrigerator. Thus, the temperature will be as low as possible.

* Avoid storing food with a strong smell, such as fish, near frozen fruit. Otherwise, there is a risk that the fruit will absorb foreign aromas.

* Pack fruit as tightly as possible. Thanks to this, moisture will evaporate less from them during storage, which will make the workpiece better.

* If possible, it is better to freeze your fruits in summer than to buy fresh fruits grown in greenhouses in supermarkets in winter. Scientists have proven that frozen fruits are of great value.

* It is very useful to add frozen fruits to the diet in winter - during the period of vitamin deficiency and exacerbation of viral diseases.

* It is undesirable to re-freeze fruits. So, a significant part of vitamins and nutrients is lost. That is why freezing in small portions is encouraged.

Defrosting correctly

Frozen fruits can be used as an independent dessert or in the preparation of any dishes. But for this, the main thing is to properly defrost the fruit.

Of course, defrosting fruits in the microwave can significantly save time, but valuable substances and vitamins of the product will be lost. It is best to defrost naturally, slowly, to preserve the quality of the frozen fruit. It is best to start defrosting on the top shelf of the refrigerator. Complete defrosting can take a long time - 8 to 10 hours. This fact should be taken into account when preparing meals and defrosting fruits in advance.

To prepare compote or jelly, fruits do not need to be thawed at all.
