Actually, the hunt is arranged not for mushrooms (they remain in the ground in the form of mycelium), but for their fruits, called "fruit body". It breaks through the soil cover and fallen leaves and reveals to the world flirtatious multi-colored hats, gracefully sitting on a leg. The side of the caps facing the ground is of two types: tubular and lamellar. Tiny spores that will give life to the next generation of mushrooms nestled in the plates and tubes, waiting for the moment of flight down to take root in the soil.

White mushroom

No matter how many times he picks porcini mushrooms, each new meeting with him causes joy and delight. Before carefully cutting off each mushroom of a friendly family with a sharp knife, you will freeze in admiration for the miracle of nature. It seems that there is nothing special about it. And the cap is not white at all, but dark brown if the mushroom has chosen a place under a pine or spruce trees, or light brown if he liked the place under birches. But she sits so firmly, businesslike and gracefully on a strong white leg, which is thin, thickening closer to the mycelium, or powerful, reminiscent of the neck of legendary heroes.

Under the brown top color, there is a white pulp, which does not lose its whiteness when the mushrooms are dried. It is for this property of the pulp that the mushroom is called "white". And what aroma comes from dried porcini mushrooms! Smell alone can be sated. Fresh mushroom does not have such an aroma, but it also smells nice.

The porcini mushroom is not everywhere delighted and respected by people. In Switzerland, for example, mushrooms (all white) are preferred. It is possible that this attitude towards porcini mushrooms is due to the fact that they are found everywhere in them. And, perhaps, because they are found everywhere, no one collects them.

White mushroom is a universal product:

* There is no need to bring meat to the dacha if there is an opportunity to collect porcini mushrooms in the nearest forest. Mushroom broth is much more nutritious than meat broth, and the aroma from broth will increase the appetite of the most capricious eater. In addition, using porcini mushrooms instead of meat will save the family budget.

* Fried potatoes with porcini mushrooms will decorate the dinner.

* Caviar made from porcini mushrooms will easily give odds to sturgeon or salmon, the prices for which bite, and the quality has not corresponded to the high price for a long time.

* Porcini mushrooms perfectly tolerate drying, becoming only more aromatic and giving a small summer in the middle of winter. But there are few hunters to salt and pickle porcini mushrooms. For these purposes, there are many simpler and more fertile mushrooms.

For these mushrooms we go to a birch grove. They grow both under old trees and next to young growth. They look like a porcini mushroom, but everything in them is paler: the color of the cap is paler, and the leg is thin and long, and the flesh is softer and blackens when dried.

The birch barks are fried; cook soups with them; stuffing pies and pies; dried for the winter; small mushrooms are pickled.

The benefits and harms of edible mushrooms

Because mushrooms are rich in protein, they are a good substitute for meat. In addition to proteins, they also contain vitamins. These foods are great for vegetarians and are also helpful for believers on fast days.

A small amount of carbohydrates and fats in mushrooms helps to maintain a slim figure.

Many fungi, whose cells have a dense chitinous membrane, are "heavy" food for the human stomach, which is difficult for the body to assimilate. Therefore, nutritionists advise preparing powders from mushrooms, which should be added to various dishes. But true connoisseurs of mushrooms are not satisfied with this advice. To facilitate the life of the digestive organs, it is necessary at least to cut the mushrooms as small as possible.
