At the same time, the owners will not wait and many home preparations for the winter. Let us recall these autumn recipes for blanks for the hostesses, so that they do not forget to make each at least one or two rolled up jars

Cranberries with sauerkraut

To ferment such a special cabbage, you will need 1 large head of cabbage, a glass of cranberries, a couple of turnips cut into thin slices, a couple of pieces of green radish, also sliced, two apples, cut into slices, cloves of garlic from one head, 2 teaspoons of salt, a tablespoon of mustard powder or its grains and freshly squeezed apple juice.

You do not need to cut the cabbage, just divide it into leaves. Place part (or rather half of all) leaves on the bottom of the enamel pot. Lay out the rest of the recipe ingredients on top, which must be covered with the rest of the cabbage leaves. Pour apple juice heated to a hot state on top so that it completely covers all the vegetables. No oppression is needed. Keep the saucepan covered with gauze on the kitchen table for four days. Then you can transfer the contents of the pot to the jars and put them in the refrigerator or in the cellar.

Adjika in a special way

To prepare an excellent spicy adjika seasoning for any meat and fish dishes, you will need three kilos of tomatoes, half a kilo of bell pepper, half a kilo of eggplant, 200 grams of onion, the same amount of walnuts, 1 large head of garlic, pods of red hot pepper (to taste), salt (also taste).

All ingredients must be twisted in a meat grinder. Then simmer for three hours. Roll them up in sterilized jars, as usual, and transfer them after standing "under a fur coat" in a cool place.

The easiest way to preserve garlic

Here is such a simple recipe for preserving garlic for the winter, we want to invite you to try to make this year. You get not only the stored garlic in this way, which can be added to any dishes, but also excellent infused aromatic garlic oil, which should be used to season the first, second courses, salads, add it to the marinade for meat and poultry.

It's easy to prepare such a homemade canned product. Garlic is peeled to cloves, folded into a clean jar and poured on top with any vegetable oil. Bottles or jars of garlic and oil should be placed on the refrigerator door or in its lower section, where the temperature is above zero degrees. Garlic oil is stored for a long time, up to two to three years.

Pickling tomatoes "As in a barrel"

Many people love barrel pickled tomatoes, but not everyone has the opportunity to cook them on their own. Either there is no barrel, then there is nowhere to store it, then there is no sufficient volume of tomatoes.

Tomatoes are obtained according to this recipe, like barrels, very vigorous, in a delicious brine of natural carbonation. You will need for each three-liter jar 5-6 black peppercorns, 3 aspirin tablets, 2-3 bay leaves, the same number of garlic cloves, a teaspoon of vinegar essence, one tablespoon of sugar and salt. Put all these ingredients in a jar.

On top, carefully place the tomatoes, ripe and rather large. Now fill the jar with clean cold (!) Water, close it with an ordinary nylon lid, shake it or simply turn the jar several times to dissolve the spices. That's all. You can put future barrel tomatoes in your country cellar.

Salting watermelons in jars

Salted watermelons are not liked by those who have not tried them. This is the opinion of lovers of this delicacy. Prepare almost barrel watermelons in a jar as follows. Remove the peels from the watermelon, cut into large pieces that fit into the neck of a three-liter pre-sterilized jar. Put them in it, add a large spoonful of honey, a spoonful of salt, garlic cloves on top. Nothing else is needed for spice watermelons.

Pour boiling water over the watermelons, sterilize for 10-15 minutes, add a dessert spoon of vinegar essence before rolling the can and you can roll it up, as usual, with an iron lid.

Barrel watermelons with horseradish

And for those who have a favorite barrel for salting watermelons and other pickles - this is the most common recipe with horseradish leaves. Watermelons need to be folded into a barrel, and horseradish leaves washed in water should be placed between them. From above, watermelons are poured with cool brine.

For every 10 liters, take a glass of sugar and salt and boil, let cool. When you fill the watermelons with brine to the top, you need to put a wooden circle and a load on them. After three days, try to see if your watermelons are enough. If it seems to you that there is not enough salt, you can add it more. Store the barrel of watermelons in a cool place.
