After that, they are topped up with refined oil, trying to cover the whole tomatoes, and the necks of the jars are first tightened with cling film, and only then closed with plastic lids (always clean).
Some gardeners put dried tomatoes in jars and cover them with ground corks or wax paper. Another part of summer residents floods them with wax, and especially advanced gardeners use resin or var for this purpose.
In addition, often dried tomatoes are packed in small boxes made of cardboard, plywood or wood, and also placed in baskets, sieve, cardboard boxes or dense fabric bags. Tomatoes will be especially well preserved if the bottoms of the container are covered with rather thick paper, and then the containers are sent to ventilated and fairly cool corners, the temperature in which ranges from one to ten degrees. By the way, dried tomatoes, unlike fresh ones, can be stored in the refrigerator as well. However, before they are sent there, the dried fruits are put in bags. In this case, the taste properties of tomatoes are maintained for at least two months.
Canned tomatoes
Although some people believe that canned tomatoes do not have a shelf life, it is advisable to store them for no more than a year. This is because the acid can gradually react with the metal caps. Moreover, this can happen even when all the jars were installed vertically. As a result of such a reaction, various harmful compounds penetrate into the banks. And connoisseurs advise to keep pickled fruits no more than eight months - then harmful bacteria will not have time to get to them.
Tinned tomatoes are stored at room temperature - a small pantry and the space under the bed are equally good for this. As for pickled tomatoes, they need lower temperatures, so a refrigerator or a cool cellar will be the best storage place for them.
Cold storage
Sometimes tomatoes need to be chilled - that's what a refrigerator is for. For cooling purposes, the tomatoes are best placed in the vegetable compartment, which usually maintains the most optimal conditions for long-term storage of various vegetables.
When placing tomatoes in the refrigerator, it is important to take into account that fresh tomatoes are placed in one or at most a couple of rows - in this case, the bottom row will not be crumpled. If the tomatoes are planned to be placed on a refrigerator shelf, then it is recommended to pre-distribute them in plastic bags.
As practice shows, tomatoes stored in the bowels of the refrigerator for about a week, when placed in favorable conditions, in most cases resume the release of fragrant compounds. At the moment, scientists are actively working on the development of new tomato varieties that would have high resistance to low temperatures. However, until such varieties are bred, all the basic rules for storing tomatoes will have to be taken into account.
