And when the fragrant berries are at home, it is important to start processing them as soon as possible.
Storing strawberries in the refrigerator at a temperature of about zero degrees and low humidity is allowed for about five to six days. If the temperature and humidity begin to rise, the berries will deteriorate and rot, and their aroma will gradually fade away.
How to freeze strawberries?
The strawberries are sorted out, then poured onto a pallet and frozen. There is no need to tear off the sepals from the berries intended for freezing. When the strawberries freeze, they are poured into a plastic bag or plastic container and sent for storage in the freezer. This storage method allows you to preserve vitamins in strawberries throughout the winter.
Drying strawberries
It will not be difficult to dry small strawberries in the oven - for this they are poured onto a baking sheet and sent to an oven preheated to fifty degrees. Sepals do not need to be torn off, the most important thing is to free the berries from rot and debris. Dried strawberries are kept in boxes throughout the winter. You can even sprinkle it with tea right away - this wonderful natural additive will give the usual drink a delicious taste and unique aroma!
We prepare strawberries with sugar
This method of storing strawberries is very popular - the berries, grated with sugar, are excellently preserved throughout the winter! The collected berries are washed and thoroughly dried, then the green sepals are cut off from each strawberry, discarding the spoiled and rotten specimens. And the rest of the berries are covered with sugar at the rate of a glass of sugar for each kilogram of berries. However, in order to fully enjoy the natural taste of strawberries, you do not need to add sugar. Then all the berries are thoroughly ground either by hand or using a blender.
The resulting mass is poured into half-liter plastic bottles or laid out in clean molds. Do not worry about the fact that it will be problematic to remove the delicacy from the bottles - if you warm them up a little and then open them, then removing the strawberries will be as easy as shelling pears. And how wonderful such blanks smell - beyond words!
If strawberries were ground with sugar, and a lot of sugar was added at the same time, then a great dessert does not have to be sent to the freezer - it can also be stored in the refrigerator. By the way, such a dish is somewhat reminiscent of jam.
Heat treatment with added sugar
This method is used by everyone who wants to make strawberry blanks more uniform and able to last as long as possible. Fragrant berries are subjected to heat treatment, warming them up to about sixty degrees. But you don't need to boil them like jam.
The strawberries are sorted out, freed from the sepals, poured into a bowl or saucepan and kneaded well with a wooden pestle. As soon as the berries start up the juice, the saucepan is placed on low heat. As the delicacy heats up, sugar is gradually poured into it, which should be taken twice as much as strawberries. After the sugar is completely dissolved, the saucepan is removed from the stove, and its contents are poured into clean jars and tightly closed with good plastic lids. When the mixture cools down, it is put into the refrigerator, where it can be perfectly stored all winter. There is no need to put it in the freezer either, however, if it is nevertheless decided to place the blanks there, it is recommended to transfer them to plastic containers.
