I can't imagine a winter table without tomatoes. And you? However, you do not need to do this, provided that you salt them in the summer so that you do not have to look for vegetables on store shelves in winter. Our first recipe is suitable for those who have a lot of green tomatoes, but there are already enough ripe ones.
Red-green
I’ll say right away that the author of the recipe didn’t think about the name for a long time. However, as with the recipe itself. I'm talking about complexity now. Difficult - nothing, but the taste is excellent. Although … Judge for yourself.
We need: green and ripe tomatoes (1 and 2 kg, respectively), two or three peppers (to taste, we use spicy), vegetable oil and salt (to taste).
We begin the preparation of salting by washing cans and vegetables. Although, from experience, it is best to start by washing the cans. While they are being sterilized, you can do the vegetables. After the initial steps are completed, it's time to put the green tomatoes in the jars. Ideal if the tomatoes are small. They look more aesthetically pleasing and are eaten faster!
Next, we prepare what we will fill the contents of the cans with. Ripe tomatoes must be grinded, salted, mixed and poured over the contents of the jars. In each jar, you can add 2-3 drops of vegetable oil, a pinch of pepper (to taste). But for spicy lovers, it's time to use the peppers (which we talked about in the ingredients). This can be done in two ways: crumble into a jar or grind into a marinade while cooking.
The salad does not need sterilization. And vinegar is also not needed here. If you do not get carried away with pepper, then such a salad is also possible for those who have a sick stomach and have problems in the work of the pancreas.
Tip: liter jars are perfect for this salad!
French delicacy
Every summer our family has several problems, and one of them is the abundance of apples. Therefore, you have to add them to every dish. And for the third year now, apples coexist with tomatoes. By the way, none of them have ever complained about such a neighborhood. For a "French delicacy" you need to take tomatoes (red, medium-sized), apples, tomato juice.
We distribute the tomatoes in the jars, leaving room for the apples. It is worth noting that the fruit should be 1/3 of the tomato. It is better not to wait until the fruit is finally ripe, but to use it still slightly unripe. This will give the workpiece a kind of sourness.
We send the fruits to a jar to the tomatoes, fill it all with tomato juice. We usually do not add any spices, as the taste of tomato juice is enough. But you can experiment if you want.
Tip: use tomato juice in glass jars (natural, tastier and healthier). Better yet, do it yourself.
Garlic-apple cherry
This is what I said above: we add apples everywhere.
We need blanks: 2 kg of tomato, garlic (packaging), apples (4-5 in each jar), red wine, vinegar 9% and salt 6 tablespoons.
We put clean currant leaves on the bottom of the washed cans. Put 4-5 cloves of garlic on them, then put tomatoes and 4-5 apples in a jar. After that, pour boiling water into a jar and do not rush to pour it out, but let it brew. Here, at your discretion, we leave the jars in this form for 15 minutes.
Then you need to drain the water into the pan (from all the cans). Add salt there. Let the contents boil for 3 minutes. Then we remove from the heat, add vinegar and wine there. And pour apples and tomatoes, twist, put in a warm place.
Tip: Use homemade garlic and apples whenever possible.
As you can see, the recipes are similar to each other, but each has its own flavor and original taste.
