Progress does not stand still, and it got to our kitchens, or rather, to the stoves. New induction cookers are slowly but surely beginning to replace the gas and electric models that have served faithfully for a long time. What are the advantages of these stoves, and how to choose the dishes for them?

How it works?

First of all, electromagnetic induction is not something new. This phenomenon was discovered by Michael Faraday 183 years ago. New in this context is the use of induction for food preparation. By and large, induction is used in all electrical appliances, and in power supplies in particular.

In short, this physical phenomenon occurs if you take two magnets wrapped in wire and apply electricity to one of them. In this case, voltage will also be transferred to the second.

How an induction hob works

As applied to kitchen stoves, the principle of operation is as follows: thanks to induction, the bottom of the pot or frying pan is directly heated without wasting energy unnecessarily on heating the surface of the stove, as in electric models, or heating the air, as in gas models. This becomes possible provided that the bottom of the pan is made of a material that is a magnet.

Benefits of new technologies

Slabs of this type are very economical due to their high efficiency (up to 90%), in contrast to other types of slabs (60-70%). It spends more energy on heating the dishes, which is why they heat up faster than usual. In addition, different programs can be set on the display of the hob. For example, after heating the stove after 20 minutes, its temperature can be reduced.

An important point to remember is that it is easier to keep clean on such a stove. It is enough to wipe it with a regular damp sponge or cloth without the use of additional chemicals. All thanks to the surface of the plate, made of glass ceramics. And you need to take care of it in the same way as for glass.

Safety in your kitchen

Despite the heating of the surface of the stove, its temperature is still not the same as that of conventional gas or electric models. If, for example, you touch the surface near the burner itself, then, of course, you can feel the heat, but a burn is unlikely to happen. The whole secret is that first the surface of the dishes heats up, and only then the surface of the stove heats up from this.

Price policy

The range of induction hobs is wide enough. And the prices for them are different, although they are not very high compared to conventional models. Usually prices start from 5,000 rubles and more. But there are small models with only burners for 2500-3000 rubles.

Suitable utensils

For induction hobs, special cookware is sold. It has a special marking on the packaging or directly on the surface. If it is not there, then you can check the inventory with a magnet. It usually comes with a stove. Or a regular fridge magnet will do. If it sticks to the bottom of the dish, then it is suitable for this stove, but if not, then it is better to choose another frying pan and saucepan.

A selection of myths

Some people are concerned about electromagnetic radiation from an induction hob. But it is an order of magnitude less than that of a hair dryer or washing machine. Another unjustified fear is the fear of burns. But, as already mentioned above, the surface of the stove heats up from the dishes, therefore it is safer than conventional models.

Someone mistakenly believes that with the purchase of an induction cooker, all the dishes will have to be replaced. But often existing kitchen utensils may well be suitable for use on such a stove. Therefore, there is no need to rush to throw away the old dishes. It is better to test it for compatibility with an induction hob.

As for the influence of the stove on the surrounding electronics, then in many modern models a special layer is used that does not allow electromagnetic induction to affect other electrical appliances.
