Lima beans (lat. Phaseolus lunatus) - a legume crop originally from Peru, widely known under the names "luniform beans" (because of their characteristic shape) and "butter beans" (the culture got this name for the creamy taste of beans).
History
America is considered the birthplace of lima beans, and its interesting name is due to the fact that it first became known about it in Lima. Currently, there are two types of these interesting beans: small and large.
Description
Lima beans are herbaceous annuals, the stems of which often reach fifteen meters in length and can be both curly and recumbent. And the shiny gray-greenish leaves of this culture are covered on top with a characteristic waxy bloom.
On short peduncles, racemose inflorescences are conveniently located, the number of flowers in which can vary from two to three dozen. All flowers are small enough and are colored either greenish-whitish or lilac.
Lima beans are beans covered with a thick layer of parchment. Most often they are white, but sometimes you can encounter a variegated color of beans. And their shape is moon-shaped or spherical.
Application
Both the lima beans and their seeds are eaten. In addition, these beans are used both dried and fresh. It is baked, stewed, fried, boiled and made into flour, which is later used to bake amazing bean bread. They also add such beans to hearty side dishes and stews and make porridge and mashed potatoes from them. By the way, lima beans go well with products of both plant and animal origin.
The valuable properties of lima beans make it possible to use it as a dietary food product - due to its high content of fiber and numerous starchy substances, it helps not only to get thoroughly satiated very quickly, but also not to feel hunger for a long time. Moreover, fiber is an indispensable aid in the important matter of improving digestion and is considered an excellent prevention of hemorrhoids and frequent constipation.
These unique beans are also considered an excellent source of valuable vegetable protein, which is why they are very loved by vegans and vegetarians. It also contains coarse fibers that are not able to be digested by the human body, which actively help free the intestines from all kinds of decay products and from harmful toxins. And this, in turn, helps to significantly improve intestinal motility. But that's not all: such dietary fibers launch fermentation processes that are extremely important for it in the intestine, which in turn provides a favorable environment for the active life of the most beneficial bacteria. Thanks to these truly unique properties, lima beans have gained fame as an effective remedy for the prevention of bowel cancer.
Iron in lima beans promotes energy production and better oxygen delivery to every cell of the body, and calcium is an excellent prevention of osteoporosis and is extremely important for strengthening bones. There is also potassium in lima beans, which helps not only to normalize blood pressure, but also significantly improve the condition of blood vessels and cardiac activity. And the folate it contains helps to minimize the risk of life-threatening heart attacks. As for magnesium, its main task is to improve the condition of the very vulnerable walls of arteries and veins, as well as blood flow in general.
