Radicio salad (lat. Lactuca sativa L.) - a green culture belonging to the Asteraceae family.
Description
Externally, Radicio salad looks like a head of cabbage, equipped with bright burgundy veins. It is characterized by a rounded shape, and its leaves are painted in spectacular purple tones.
For the first time this kind of salad was received by a Belgian agronomist, and he did it by means of restrictions in the amount of absorbed light. The burgundy shades of Radicio are due precisely to its cultivation in the dark, because in the absence of sunlight, photosynthesis becomes simply impossible. And since the leaves are not in contact with streams of light, they cannot have green tints. Some time later, a similar technology found its application in the cultivation of the equally popular Frize salad.
Currently, several varieties of Radicio salad are known.
Application
Most often, Radicio is used as an additive to various dishes or as an incredibly effective decorative element. Italians willingly fry these bright leaves with salt in vegetable oil - they consider such a dish to be a full-fledged independent dish. Initially, the taste of such a salad is bitter, but as a result of heat treatment, it quickly changes to sweet. In addition, Radicio goes well with garlic, onions, caraway seeds and meat. Sometimes these leaves can be seen in some risotto recipes, as they form a harmonious union with rice, and in their historical homeland, in Italy, they are often grilled, as a result of which they turn out to be slightly sweet and surprisingly soft.
Radicio salad is stored very well - if you put it in the refrigerator, you can enjoy its excellent taste for several weeks. If the upper leaves are slightly tucked up, then the inner ones in any case will not lose their suitability for use. Accordingly, in order to refresh this product, you just need to cut off the withering leaves.
Radicio salad is the best helper for maintaining the health of the circulatory and cardiovascular systems. And the antioxidants in its composition help to slow down the aging process. 100 g of such a salad contains only 20 kcal, which means that everyone who wants to say goodbye to extra pounds can use it without any fear.
The phosphorus contained in these spectacular leaves is actively involved in the production of certain enzymes and a number of hormones, as well as in maintaining the proper functioning of the nervous system. In addition, it has a very beneficial effect on the functioning of the brain. And potassium makes such a salad incredibly healthy for the heart (in particular, it quickly helps to debug the heart rate), moreover, it supplies the brain cells with vital oxygen for them and helps to increase stamina and activate mental abilities. There is a lot of folic acid in these leaves, which not only contributes to the elimination of bad cholesterol, but also takes an active part in the hematopoietic processes taking place in the body. And, of course, folic acid is vital for all people under the influence of increased nervous stress, as well as for expectant mothers - the risk of developing various pathologies in a child in this case will be minimized.
Radicio's salad also contains fiber, which is indispensable for digestion, as well as iron, which is extremely important for blood formation. By the way, iron perfectly helps to maintain the detoxification processes taking place in the body.
Among other things, Radicio salad is a great help in maintaining the health and beauty of the skin.
Contraindications
Radicio can harm only in case of individual intolerance. In general, if consumed in reasonable doses, it is an absolutely safe product.
