Romanesco cabbage (Latin Brassica oleracea Romanesco) Is a cultivated cabbage variety from the same group as the infamous cauliflower.

History

Such an unusual name for cabbage directly indicates that this vegetable originates from the vicinity of distant Rome. That is why it is often called Roman cabbage. According to a number of available data, the history of this amazing representative of the Cabbage family can be traced back to the distant 16th century. But the Romanesco cabbage came to the international market only in the 90s. last century.

Some experts claim that such cabbage is a hybrid of broccoli with cauliflower, however, this version has not been confirmed until now - not a single authoritative source mentions such a feature.

Description

Romanesco cabbage is a thermophilic annual, very similar in appearance to the cauliflower beloved by millions of people, only, unlike its bright fellow tribesman, Romanesco is characterized by a pleasant light green color. The inflorescences of this cabbage are distinguished by a very peculiar shape: each of its buds consists of a group of smaller buds arranged in the form of a bizarre spiral.

If we compare Romanesco cabbage with broccoli or cauliflower, then it should be noted that it differs not only in a much more delicate texture, but also completely devoid of a bitter note, a soft nutty-creamy aftertaste.

Usage

Romanesco cabbage is prepared similarly to the popular broccoli. At the same time, it is extremely important to monitor the cooking time: if this cabbage is overcooked, it will become as tasteless as broccoli overexposed in hot water. Such cabbage can be baked, fried, boiled, and also cooked with its addition delicious sauces and great salads.
